Hear me out.
As much as I'd like to see Shawn Michaels v The Undertaker again, I think it won't be able to live up to the standard set by last year so to save disappointment, I'd go towards Michaels v Triple H (if not my pipe dream of Michaels v CM Punk). But where does this leave The Undertaker?
Assuming that both men lose their titles, why not help out a young guy like Sheamus on the big stage? Sure, The Undertaker will win, but if Sheamus has a competitive match with Taker, it could do more for him than his flukey WWE Championship reign ever did. Plus, with other (possible) matches like Michaels v HHH, Edge v Chris Jericho, John Cena v Batista and Bret Hart v Mr. McMahon looking like high-quality matches (maybe not Bret v McMahon... although it would be memorable), I think The Undertaker deserves to have an "easier" WrestleMania match this year after putting on 3 excellent matches with Batista, Edge and Michaels, and not have the pressure of having to save the show (like last year).
If he could get a great match out of Batista, why not Sheamus?

Even excluding all the HBK/Undertaker buildup (which an awful lot of people on here seem to think is going to swerve into HBK/HHH anyway, though still I doubt it), I don't think that match would be good for either man, at least not yet.
Undertaker's past the point where he can get a lot of mileage out of fighting all the latest monster heels who manhandle him the way no one's ever done before; it's a pattern he's followed for so many years, and which everyone is so familiar with, that it's really lost its luster. These days, his Wrestlemania matches seem to be dream matches against other main eventers, guys who could at least conceivably be trusted with ending the streak, and that seems to be working.
As for Sheamus, the last thing he needs is another main eventer definitively beating him. Where he goes immediately after losing the title (which is probably happening at the EC) is going to be very important; it'd be very easy to let the audience dismiss him as a midcarder who got a fluke win and is back where he belongs, and losing again thereafter to 'Taker (or HHH, or whoever) would just emphasize that he's nowhere near their league.
I still say the best use of Sheamus at this Wrestlemania would be to let him annihilate Rey Mysterio, and get the rub for putting him out for his surgery.

Only if they put Sheamus over. Otherwise it would bury him if he lost. BTW, I started watching Raw again on 1/4 and was giving this whole Sheamus thing a chance...then he talked. How can someone that sounds like fat bastard be taken seriously?

Taker vs Sheamus (and HHH vs HBK) the best option. Cena vs Taker was rumoured to be "set" as a WM-match for months, but that seems to be not in the cards right now. Taker vs HBK 2 ? A lot of people don´t want to see it. Concentrate on "fresh" match-ups. I think they gave Sheamus the belt to give him sort sort of "credibility" for the moment (which is just being an Undertaker-WM opponent) and not in order to build him as a long-term main-eventer.

I thought about this last night. The fact that he beat Cena the way he did, makes him an instant threat to the streak. I'm all for it. I don't wanna see Shawn/Taker II.

I think it's a very good idea, in terms of visual contrasts between them. I support it, but can't imagine they'd do it. Maybe they'll be put together at some point, but I don't see it being Wrestlemania this year.
