How in this day and age, can you buy a handheld video camera that does 1080p video, yet the still camera on the device will only take 8 megapixel pictures? Something about that just doesn't seem right. If I can record full HD video, shouldn't I be able to also take HD quality pictures?

Considering that the resolution on those cameras are well beyond what HD can do (3264 by 2448 pixels), I'd say your pictures are HD quality.
