I admit, when the DVD was first invented and they started doing commentaries for them, I thought it was a stupid concept. I've been won over throughout the years with some great commentary tracks though. Some of my favorites are:
Family Guy : It's the cast just being funny while an episode plays basically.
Clerks The Animated Series: Similar to the Family Guy ones, it's Kevin Smith and crew being funny but also being very informative about the short-lived show.
Step Brothers: The cast and crew sings the plot of the movie for about the first half hour, then talks about basketball for the rest of the movie.

Clerks TAS was the first one that popped into my head. I loved all the drama with the Korean animators.
Roger Ebert has some great commentaries, especially on Casablanca and Dark City (a pretty random one for him to have a commentary track)

Oh man, I was content with my VHS copy of UHF. I never thought about the bonus features - I may have to pick it up. Love Weird Al.

This is Spinal Tap. Because they do it in character and it's hilarious. I'd already bought the standard DVD version not long before the special edition came out and I wasn't crazy about buying it again. Then I saw the commentary was in character and knew I had to buy it.
Hot Fuzz The commentary with the actors who play the Police. It's really funny and you can tell just how much fun they had making the film.

I gotta agree with Family Guy. I've watched all of the DVD releases, and watched all the commentaries...What? I didn't have cable at the time...

- Red Dwarf - It's basically the cast just arsing about, In series 4 they sing along the theme song. - Dog Soldiers - Funny - Cannibal The Musical - Cast + Alcahol = Awesomeness

Simpsons and Venture Bros each have some good conversations. Especially VB. Its like Billy and Mr. White doing commentary

any of the Futurama commentaries are full of win, i like the luck of the fryish one where billy and john break out the "nobody cares" song...
most of the simpsons commentaries are greatness too...even more so when John Lovits is doing it with them, and "the new kid on the block" commentary with Conan is amazing.

One Crazy Summer - just listening to the commentary alone makes the dvd worth every penny, bobcat is talking in his normal voice, and basically makes fun of the movie with director savage steve holland, and Curtis Armstrong

-The Goonies. The movie that made me realize what DVD commentary was. And having the main cast and director there doing video commentary, watching the movie along with us, was a great feature.
-Tropic Thunder. The one with the main cast. The simple fact that Robert Downey Jr. decided to keep faith to his line of "I don't break character until I finish the DVD commentary" and do the entire commentary as Lincoln Osiris is golden.
-Most Simpsons DVD commentaries. Depends on who does them, really. Also nod to The Simpsons Movie commentary. Really well done. Loved how they STOPPED THE MOVIE to talk about why the church was next to Moe's bar when the dome was closing in.

Adam West is one of my heroes. That's why. - Orgazmo - Hilarious! - Return Of The Living Dead - Zombie commentary. What more needs to be said? - Jackass: The Movie commentaries are always good for a laugh. - Ghostbusters - Funny, and educational. - The randomness that is "The Rules Of Attraction" commentaries. If you've heard them, then you know why.

Back to the Future Q & A commentaries were very funny and informative. I'm also a big fan of the Gus Van Sant Psycho commentary (since I'm one of two known people who like the film) and the Friday the 13th Part VII track with John Carl Buechler and Kane Hodder.
All-time greatest DVD commentary, however, has to be the cast commentary on the Last House on the Left DVD (the old, GOOD one), featuring the three actors who played the vicious gang in the film. They spend the vast majority of the commentary picking the movie apart, flat-out tell you that one of the actresses was a slut who had sex with each one of them, and bash Wes Craven to high heaven. Deservedly so, if you've seen how badly directed the film is.

also have to add the vh1 monkees story movie...but just Micky Dolenz commentary, he just makes fun of it, and keeps saying "uuuh..i dont recall THAT happening..but it makes for good dramatic effect so why not!" its one of the commentaries that i can listen to when im in a bad mood and it automatically cheers me up.

I love "Old School" commentary. The characters are funny and they point out a lot that you don't catch the first time.
edit: By "Old School" I mean the movie Old School.
