So I'm in the mood to watch something I've never seen, but I've kinda lost touch with anime of the last few years. So does anyone have any recommendations for stuff I should watch? It could be super old, or it could be new as hell, I just wanna watch something.
For reference, here are anime I either already own, or have seen and enjoyed:

That's not an entirely complete list, but it's all I could really think of for now.
As for stuff I don't like, it more or less adds up to most Shonen Jump-esque stuff, like One Piece, Shaman King, Bleach, Naruto, et cetera. So try not to recommend them if possible.

Fate/Stay Night
Its got an interesting, original story, good artwork, and great voice acting.
For the record, it is an action series with a good amount comedy and drama thrown in.

I'm a pretty big fan of Black Cat. It's a fun action series with a great cast of memorable characters and good combat scenes. I'd recommend it, especially since you've listed a lot of action/adventure series in your list.
Hell Girl is good as well as a horror series with a thought-provoking theme.
Also, if you like dramedy series, Welcome To The NHK is one of the most touching animes I've ever seen. It made me laugh, it made me cry, and it deals with a lot of relatable issues in today's world.
EDIT: I notice that Full Metal Panic! isn't on your list. That's a really memorable action/adventure series that you can't miss. I'd recommend the first season mostly, though, because it struck a good balance between likeable comedy and serious suspense and storytelling. After that season came Fumoffu, which was entirely silly and comedic, which is good if you like that sort of thing, except that immediately after it came FMP: The Second Raid, which does a complete jolting 180 and is super-serious, somber, and depressing.
And as far as anime comedies go, you haven't seen anime hilarity until you've seen Cromartie High School. It's the Seinfeld of anime, and can make anyone bust a gut.

Fullmetal Alchemist: Brotherhood. It is FMA, but it exactly follows the manga(well, not EXACTLY, cause they speed through the early part of the manga thanks to the first anime covering most of it already).
Lucky*Star is a great comedy series that you just HAVE to try.
The Melancholy of Haruhi Suzumiya is good, too.

Seto no Hanayome/My Bride is A Mermaid. Great crazy comedy series. It's pretty old, but GTO is still definitely one of my favorites as well. Monster. Definitely Monster. Also Secret of Cerulean Sand. It's a fun adventure series with a nice story. Black Lagoon?

Vandread. In the distant future, men and women live on separate planets and hate each other... until one day a bunch of guys from the male planet end up aboard a female space pirate ship. Hilarity, drama, fanservice and humongous combining mechas (and rather bad CGI, think Initial D's CGI scenes IN SPACE) ensue. It's better than my crappy description makes it sound.
I've kinda fallen out of the loop as far as current anime goes, but I've been watching K-ON as of late and enjoying it. Naturally, some folks around here will probably look down their noses and scoff at the mere mention of K-ON because... well, it's about a bunch of pretty schoolgirls playing rock music (and as we all know, no self respecting SERIOUS anime fan would watch moeblob-riddled schlock like that), but I find it rather entertaining.

Excel Saga is absolutlely hilarious, and both the dub and the sub bring the hilarity in different ways so I suggest to watch it twice.
If you end up liking Excel Saga try Puni Puni Poemy.
I also love Higurashi no Naku Koro ni, but that's not a comedy.

Cromartie High School - Think of it less as a traditional show and more of "animated sketch comedy." The character list includes a robot who doesn't realize he's a robot, an international criminal in a lucha mask, the Antichrist, Freddie Mercury, and a gorilla.
Dai-Guard - Three "middle management" office workers fights a slew of monsters in their shoddy, poorly manufactured mech. Despite the premise, the show is closer in style and feel to modern American sitcoms (namely Scrubs and Community) than traditional anime.
Gungrave - This is what you get when you combine The Godfather, Kill Bill, Spawn, and The Night of the Living Dead. It also features one of the greatest "payoffs" ever, anime or otherwise.
Here Is Greenwood - A six-episode OVA about the goings on at Greenwood, a dormitory at a prestigious private school. Among the tenants are a gender bender, ghosts, a guy who sleeps with his motorcycle, and pack of geeks that turned their rooms into a full-functioning arcade.

Even though you've seen DBZ, DBZ Kai is totally worth looking into. It feels familiar, yet strangely fresh. I actually have been watching Kai lately, and despite my qualms with the soundtrack, it's pretty f***ing awesome. Nearly all the voice work is better. As is the script. And I'm glad they left the ridiculous Japanese episode titles in.

Hanamaru Kindergarten and K-ON That's just a few of the moeblob-filled anime that I watched and liked. And they are pretty good too. ...though, I guess I'm more of a weirdo anime than than a serious one.

Last Exile. Flying-battleship steampunk series. Cool soundtrack with lots of eastern and celtic folk-sounding elements. Visually gorgeous.
The R.O.D. franchise. Deadly magical origami skills FTW. And would you believe an organization as innocuous-sounding as the British Library Association are the main villains? And damn good ones, at that. OVA is good, TV series is better.
Witch Hunter Robin. Underappreciated since its Adult Swim run half a decade ago. Should be right up your alley judging by your taste for darker/paranormal-themed series.

Its the first time I've actually enjoyed the Dragonball Z anime. That's how much the more faithful adaptation matters to me.

Not to mention quite some wrestling references in the names of characters, Japanese ones though, like Akira Maeda. Hell, just watch it. By episode 3 you're glued, and the eps are no longer than 15 minutes.
