Somebody mentioned Casshern as anime, which I've never watched but makes sense it would be one. The movie itself is quite screwed up- one of those movies with some pacing problems but incredibly beautiful cinematography.
Another screwed up movie (actual anime) is Perfect Blue. I like the messed up ones, I guess. Lain is good too. If you wanna go super old school, there's Giant Robo, which is the blue print for 1000+ others that follow the mecha storyline.
Anybody still watch Cowboy Bebop?

Last Exile. Flying-battleship steampunk series. Cool soundtrack with lots of eastern and celtic folk-sounding elements. Visually gorgeous. The R.O.D. franchise. Deadly magical origami skills FTW. And would you believe an organization as innocuous-sounding as the British Library Association are the main villains? And damn good ones, at that. OVA is good, TV series is better. Witch Hunter Robin. Underappreciated since its Adult Swim run half a decade ago. Should be right up your alley judging by your taste for darker/paranormal-themed series. Ah, I forgot to mention I'd seen R.O.D. the TV. Awesome, awesome show. Last Exile sounds f***ing incredible. I think I'll check it out.

I'll suggest Durarara!!, as it's very new and I've been enjoying it a lot. It's by the team behind Baccano, but I feel that it's a major improvement over that.
Monster is an absolute must watch in terms of drama, suspense, mystery, etc. It's an absolute masterpiece and I recommend it with every kind of praise.
Black Lagoon maybe? Sorry, I'm a bit out of the loop since I almost exclusively read manga nowadays as opposed to watching anime, but definitely a fun watch for well done gunslinging.

Can't believe no one mentioned Ultimate Muscle.
There's also Mew Mew Power which is silly and corny as hell but if you like Sailor Moon is worth watching.

Also, although you don't really seem to like Shounen-Jump esque animes, I would like to throw Major into the mix. It's a very good anime, and made me spin my opinion on baseball completely.

Two more. Moyashimon and GA Geijutsuka Art Design Class. Both are pretty good comedy series, and I guess they give some educational info as well, Moyashimon with stuff like micro-organisms and GA with art stuff.
Also, Souten no Ken, prequel to Hokuto no Ken. The anime isn't as crazy awesome as the HnK anime, but it's still pretty good.
