Vince, HHH, and the Undertaker(solely because I want to know what was going through his head when Vince proposed the Undertaker character to him)
A darkhorse that would be a fun read would be Raven.

Orton, if for no other reason than to hear his side of the s*** in the bag tale.

Without a doubt, Undertaker. The guy's been around for so long and seen so much that his insight into the inner workings of the WWF/WWE would be amazing. Plus I'd like to know his views on his character and all the ways it's evolved.
Another one would be Paul Heyman. It'd be cool to read his explanation behind his booking philosophy, how he first got into wrestling, his relationships with the ECW talent, and what he's done since ECW.
And it could be either really amazing or a total headache-inducing crazy trip, but a tell-all autobiography by Vince McMahon. I'm just aching to get inside the head of Vince, not just because of his position in the business, but simply because he's such an eccentric, complicated guy with so many rumors and skeletons in the closet, that he'd be a really fascinating guy to psychologically analyze.

Pretty much what everyone has wrote here - Vince, Taker, Orton. I'd also be interested in a Rey or Cena one, just to see their views and complaints about the company. Or a Batista tell all where he tells us all about the divas and what they're like in bed.

Ya know, between his outside interest ventures and his keeping quiet on his life in wrestling... The Undertaker is gonna be set for life when he leaves.
He'll get a book and a shoot that'll sell like gang-busters.

JR's got to have some interesting insights and stories over the years.
I'd really also like to see Booker T's autobiography.

I read in powerslam a while back that wwe were thinking about putting out an Iron Sheik autobiography... which would be interesting... it would also be the only book in history that would have to be written entirely in caps lock.

CM Punk, Undertaker, Carlito (that guy has honesty written all over him), and Evan Bourne.

A truthful Hulk Hogan one. I'd love to hear his story, but the man can't tell the truth to save his life.

As some folk have mentioned, Undertaker, McMahon and I’d add in Glen Jacobs as well as they have been around and experienced some of the most interesting decades of wrestling. Guys like Cena, Punk are only half way through a career, so let’s hear the story at the end of the journey not before. I would also love to read Jake Roberts book, and a Steve Austin and a Hulk Hogan book not ghost written – these guys helped transform wrestling and I want to hear a candid history of what happened, not a sanitised version from some journalist. I also think a Randy Savage book would be interesting as well.

Vince McMahon, but not really from a "when I was a young buck" story of his life perspective, but more from an inside business one to hear about shot down storylines and backstage drama and stuff like that.
