For all of the threads comparing WWE guys to comic book characters / Pokemon / Star Trek ships / sports figures / assorted smoked cheeses, why not one for Mario? Both have a suitably enormous cast.
A few examples I can think of -
Mario: Cena (for all of the Santino comparisons, Cena's the guy who fits the bill as being the invincible / totally flat character)
Bowser: Sheamus
Birdo: Santino or Nicole Bass
Doopliss: Charlie Haas
The Chimp: Triple H

Why the hell haven't they done a wrestling game with Nintendo characters? They've done everything from tennis to go-kart racing, why not wrestling?

OK then - how come there aren't any Smash Bros. style games starring WWE Superstars?
Seriously though, its because one company putting out two fighting games with the same characters would split the sales that one game alone would get, meaning neither game would end up successful, and it's a LOT of extra resources and time and money to make a game so similar. It's not like theres a large group of people that want a Mario Wrestling game that wouldn't buy Smash Bros. and there are a LOT of people that would buy Smash Bros but not a 'wrestling' game of any kind.
Plus there's a really close parody of wrestling in Paper Mario: Ten Thousand Year Door - a whole section of the game is Mario working his way up the ranks of an indy fighting organization full of colourful characters with nicknames and pro-wrestling jokes. It was pretty awesome.

I wouldn't release a wrestling game around the same time as a Smash Bros. game , but I still think it could work. Pro wrestling is big in Japan, and the Mario franchise sells, from golf games to RPGs.

According to Scott Steiner, Matt Hardy would be Yoshi. I can't remember his reasoning though.

Not current, but I saw a strong similarity of Miss Elizabeth to Princess Toadstool (there was no Peach here back then) when I was a kid. Same sort of dresses, same sort of beauty and damselness.

Laycool = The Shroob Sisters. Hornswoggle = Kamek Edge = Smithy. Actually, I'd make Finlay Kamek and Hornswoggle Shy Guy; appropriate, since he is tiny and runs around playing tricks on people, plus I could see Hornswoggle living in a toy box.
