They're equally good (or bad, depending on who you ask) on both systems. No real major differences one way or another. I think the PS3 versions of Smackdown vs. RAW have a Youtube upload feature thing that lets you upload your video replays, and the 360 versions offer 64 CAW layers instead of 32 (which is a pretty big difference, actually). At least this was the case with all the previous SD vs RAW games, I don't know if both versions have 64 layers in the latest game.
Before you ask about online play, let me tell you that it's absolutely terrible in pretty much every way possible, with a bunch of morons running around spamming running grapples with their hacked CAWs, and the worst netcode I have ever seen.

So online is just like it was on the PS2 where people ONLY used maxed out CAWS or completely altered movesets to regular superstars and wanted to win in 3 moves. Got it. That's no fun and killed online wrestling for me. Pissed me off in fact. Why do they even bother? They should be an option to use only REAL movesets even for CAWS(at least while playing online) and we should see the move set we are up against. I remember Finley had some tough to deal with moves so I'd avoid him at all costs let's say. Me? I wanna have a good match, maybe make a pin but not take the three I know I can get, then do more stuff. Otherwise let's just press buttons blindly and see what happens... it's about as fun!

The best way to find good opponents for online is to check the game's message boards (or just play against people you already know to be honest). Usually you can find topics about all the cheaters/exploiters to avoid playing against, or at the very least people who just want to have good matches as well.

Yeah, the SvR games are definitely ones where you want to friend everyone you have a good match with, otherwise it'll be near impossible to sort through the crap.

I can't believe they don't have caps or restrictions to rooms (I've never been online in SvR so I dunno the lobby system or anything like that).
It would make a huge difference to be able to limit ranked matches to using just the default WWE Superstars. As for the rooms, allow different limits; no limit (and have an option that sets overall rating caps on top of that), WWE Superstars and Legends, Superstars or Legends only, and Created Superstars only (again, overall rating cap).
It seems kindof silly that it's been that way for so long and they don't want to change it up. I can see it sliding for one game (GT5 had a problem with everyone using the most top-tier cars imaginable, and now through game patches it's been limited to where people that use them have their own rooms), but year after year is just plain lazy.

PSN's current problems notwithstanding, I sure wish I had a PS3 and purchased it for that rather than for the 360.
I refuse to pay for Gold, because I have ZERO interest in playing people online. I would have really loved to have been able to take advantage of the Community Creations though, which would have been free on the PS3 version. I'm not subscribing to Gold just to be able to trade CAWs.

I did one online match. I had my CAW go up against HHH. Dude was schooling me right away, so I slid out of the ring, grabbed a sledgehammer and hit him with it for the DQ.
