Assuming WWE-exclusive, Daniel Bryan vs. The Miz at Night of Champions 2010.
Otherwise, I'd put a Come As You Are Chicago Street Fight between the teams of Colt Cabana/El Generico and Steve Corino/Kevin Steen and a singles match between Chris Hero and Tyler Black, both from a Ring of Honor Show in Chicago in April 2010, really high on the list. Also, from back in 2007, Daniel Bryan vs. KENTA at an ROH show in late June. Overhead belly-to-belly suplex off the ring apron = win.

WWE: 1. For the sheer experience - Hulk Hogan vs. The Rock, WrestleMania X8, 2002, SkyDome - I was a die-hard Hogan fan as a child, but I started hating him when he went to WCW. The Rock, to this day, is probably my favourite wrestler ever. I was conflicted, but I cheered for Rocky.
2. For what I remember most - Ric Flair vs. Mr. Perfect, house show, 1992, Maple Leaf Gardens - I was about to turn 10 at the time and they announced it as a "Loser Leaves Town". It didn't make sense to me at the time, but there was a crap-ton of Flair signs saying "Please don't go". Crowd was totally behind Flair, but Hennig was the babyface at the time. It didn't make any sense. I asked the older guy next to me what was happening and he explained that Flair was going back to WCW. Kayfabe died that day.
Overall:
Tyler Black vs. Davey Richards, Death Before Dishonor VII, 2010, Ted Reeve Arena - Just stupid. I don't know how else to explain it. It was breath-taking for 45 minutes. I was there with a buddy who hadn't watched wrestling since he might have been 10. It blew his mind. He bought into the near-falls and was as excited as an 8-year-old watching it. It was simply beautiful. If you haven't seen it, give it a look. Perfection.

For WWF/E:
-1994: I went to Wrestlemania X as a 10th birthday present, and while the HBK/Razor Ramon match was memorable, my young mind was blown getting to see Bret vs. Owen right away, so I'll give the nod there. Nostalgia points for getting to see Bret win the World Title, he was who I was rooting for the entire time.
All-around:
-I've been to a lot of ROH shows, and it's hard not to say CM Punk vs. Austin Aries when Punk pulled his infamous "I am the devil" farewell swerve. One of the best angles I've ever seen pulled off live.

I've only been to one WWE live event which a UK Smackdown taping last April. This also had the only NXT episode which I have ever watched in full. Anyway the two best matches of the night were:
Daniel Bryan vs William Regal: short but still a great match
Jack Swagger vs Edge vs Chris Jericho for the WHC: Match of the night.
(Going to the UK taping of Raw in April so hopefully i'll be able to add to this list)

ok, let's see if I can remember them all. I'm mixing best matches with overall epic moments to see Live.
1. HHH vs. Cactus Jack Street Fight, Royal Rumble 2. First Elimination Chamber, saw HBK win the belt. 3. HHH vs. Rock from a House show in MSG I believe 1999, Rock was champ and the false finish saw HHH win the belt and MSG went nuts, but then of course, match restarted and Rock won. 4. Hardyz v. APA v. Dudleyz, very last show before the brand split. 5. HHH v. Kane where Kane removed the mask.
Outside of WWE, 1. Random terrible Nitro because I got to go backstage and meet Kevin Nash. 2. Homicide vs. Danielson Final Battle, Homicide finally won the ROH Belt. 3. Danielson vs Morishima (both NYC encounters) 4. Joe vs Morishima 5. Misawa vs KENTA 6. Danielson vs. McGuiness, both of their last nights in ROH
There's a lot more that I can't remember now, but my list seems alright

Chris Jericho vs. Randy Orton (WWE World Title Match). Feburary 2008 Hawaii Live Event. A PPV Quality Match at a Houseshow! Better than their Armegeddon '07 match.
Chris Jericho vs. Rey Mysterio with Special guest Ref, Ricky Steamboat. July 2009 Hawaii Live Event. 3 of my favorites growing up (2 fighting, 1 reffing) as a kid involved in one great main event.

A tie between Batista/Flair vs. HBK/Benoit for the Raw tag titles on... I wanna say the 2nd to last Raw before Backlash 2004. The other being HBK/Mysterio on the go-home Smackdown before Royal Rumble 2010 (I hope that makes a DVD someday, great match).
