.. you may not normally like. I nominate Nickelback's shockingly good cover of Metallica's "Sad But True"

While were on the subject of Chad Kroger covers, I did like his cover of Elton John's "Saturday Night is All Right For Fighting" (w Kid Rock)
Heh, maybe Nickleback should have been an all cover band.

I wasn't too fond of The Ataris, but their cover of "Boys of Summer" was pretty good. In fact, it became the band's most well known song outside of "In This Diary."

Now wait, are we talking shockingly good based upon the idea that we wouldn't expect a decent cover to come from said band? Or shockingly good because you didn't think the original could be improved upon?
Because the band doing an unexpected but shockingly good cover...well, I'd say Higher Ground by the Chili Peppers is up there...
As far as outdoing the original, a number of Fozzy's covers are on par, if not superior, to the originals in many ways (Big City Nights, I'm looking your way...).

Pretty much anytime Marilyn Manson covers someone. Normally, I can't stand listening to Manson, but for some reason, whenever he covers a superior artist's work, it sounds amazing.

Even though I'm not a fan of either of these bands, I prefer Limp Bizkit's cover of "Behind Blue Eyes" and Alien Ant Farm's cover of "Smooth Criminal" over the originals.
Honorable mention to Dynamite Hack's version of Boyz In The Hood (LANGUAGE WARNING):

off topic but I think they really missed the boat with Bieber. there was an obvious cereal endorsement for him and no one jumped on it. I think people would have purchased box after box of Justin Bieber's Baby Baby Baby Oh's Cereal. Three times more baby in each box than the other brands!

Creed's cover of Riders on the Storm wasn't as offensive as I thought it would be, so I'll give it a mention.

And I think I misread the thread title...
I was thinking more along the lines of what The Booty Disciple was thinking. Because I like Relient K but I thought there was no way in hell they could pull off Bieber.

Fall Out Boy's version of "Walk" by Pantera. It's not great, but it's alot better than you'd think:

I love both Dino, Jr. and the Cure, but I was shocked at how well this turned out.

In terms of someone making a horrible song decent, Alanis Morrisette's cover of "My Humps".
