From a pure in-ring standpoint, I always have to go with his first match with Shawn. Absolute perfection.
But in terms of drama and build, it's a tie between the third Triple H match and the first Kane match.
Honourable mention also goes to the match with Batista, which deffo wins the How-The-Hell-Was-That-Match-As-Good-As-It-Was?? Award.

Orton and Edge were the ones where he was most "in danger" of losing, because it's hard to believe he wouldn't have used the loss to put over one of them as opposed to HBK or HHH.
That said, the Orton match narrowly pips the Edge match.
That was the thing with WM21, the rare WM where the main events were the worst part of the show.

The HBK match from Mania 25 was one of the best wrestling matches I have ever seen. The drama and near falls were incredible, I jumped up off my couch when Shawn kicked out of the Tombstone.

First match against HBK followed by his match against Edge. This. Granted I missed the HHH/HIAC match, but out of the ones I have seen, those two take the cake.

The match against Kane from Wrestle XIV. Great build up with Taker refusing to fight his brother. It also took place before the streak was THE STREAK. It was a very good match with lots of false finnishes and you didn't really know who was going to win.

Honestly? I like this year's cell most. Storytelling, atmosphere, build-up. Loved it. Me too. I wonder if part of it (for me anyway) is that I wasn't expecting much, and was blown away by how awesome it was.
