I got the Undertaker DVD:
-There are full matches
-It keeps kayfabe and treats Undertaker like a historical figure
-Has great matches on it, including two Bret Hart ones and a great Kurt match
-Keeps the darkness and mystery that the Undertaker holds
-The promos, Video Recaps, and narrator all build to make this dvd great.
So having a reserve about the DVD is crazy. And the thought that the matchs aren't full is foolish. Bret could have a documentary and 18 but Undertaker's 21 matches aren't full ones? Granted I don't have Bret Hart's yet, but I'm not surprised that majority of you suggested Bret Hart seeing as he is Jesus here. I like Bret Hart but I don't understand the obsession here.

I own both, here's my thoughts:
Both must owns if you are fans of either guy. Bret has a documentary, which is interesting and has lots of great footage about Stampede and over seas and his family. This is all great stuff. There are no full matches from outside of WWF except his tribute match for Owen against Benoit from WCW. There are some glaring ommisions, like Shawn Michaels, and some things are presented out of chronological order to make the story more dramatic or easier to understand. There is some really strange productions choices: His match against Ted Dibiase had no commentary and his match against Bam Bam had only Spanish commentary. All told though, the matches where complete and great.
Undertaker's entire DVD was treated as a sensational story/ documentary and his matches where used to move the plot. It covers in gory detail all the best moments of his best fueds. I really like the detail they use in rellaying the angles. Bret's DVD was a great match, but often very little explanation of the angle before the match and the fallout, as typical. I really enjoyed this approach. Again some glaring ommisions, but like Bret, he's had to many good ones to put in one collection. The extras are totally great, including Hogan on the Funeral Parlor which is my all time favorite non-match wrestling moment. And yes, the case sucks.
So if I had to buy one first, having seen both....(tough call)
I'd get Takers. I like the format better. The matches and the story belong together, not segregated and I hope this is how they are packed from now on, albeit in a better case.
Also of note, I got the limited Bret, which came with a crappy WWE ski cap. The packaging no longer snuggly fits the DVD holder either.

Both DVDs are fantastic. I'd go with Hart.
