I think this because Kayfabe wise, after the last three wrestlemania matches and his program with Kane, The Undertaker is at his weakest, so if you were a heel or just an oppurtunist(not edge of course) wouldn't you want to take a chance to make a name for yourself? This could be someone like Cody rhodes, Mark Henry(which seems likely), or hhh.
On the other hand if this is the last match maybe it should be a match that would remind us of the fear that he would instill in opponents, especially after having his last couple of opponents facing him with out fear or intimidation. Edge did a really good job at showing how intimidating taker could be yet he still had a really good match. Orton accomplished this as well.
So who could he face that would be a heel but would also sell the intimidation, reminding the fans of who the Undertaker is and was?

Wade Barrett. I could see him no-selling the fear at first and then eventually buckling and breaking after busting out everything he can. Good way to push him over the edge from "trying to make it" to making it.

Ziggler could actually pull the "cocky jerk who thinks he can make himself by beating Taker, but then gets the beejeebers sacred off him" really well and he could sell like a maniac during the match to cover up Taker's limitations but there's no way any one would ever buy Ziggler being the one to end the Streak. The only heel they have right now that would seem like a real threat is Henry.
I still honestly think he's going to take this year's Mania off and finish vs Cena at 29.

I'd also be okay with Henry crushing Show at the next two PPVs then moving on the Kane and beating him at Rumble and maybe a re-match at Chamber (I hate the Chamber title matches before Mania). Then he builds up to defending the title vs. the Undertaker at WrestleMania. Henry's a solidly built monster at this point that people could believe may lose to the Undertaker. Undertaker, of course, ends up winning the match, 20-0. BAM, Daniel Bryan cashes in Money in the Bank on an Undertaker who, much like at Mania 27, is down for the count, ends the streak at 20-1 and wins the World Heavyweight Title!

Fanboy speaking, I'd love Mankind.
Though now that I've been presented the idea, I'd greatly enjoy Dolph vs. Taker too. I hadn't considered it till now.
Wade works because, well, Wade is great and you have a built in reason.
Mankind, because I think Foley could pull off a bitter old, crazy Mankind really well. Plus it's been ages since they last tangled and they've never done it at Wrestlemania.

I really want some asshole to challenge Undertaker's streak at Mania, not because he wants to prove himself (he's so arrogant, he already thinks he's a legend), but because he wants to screw over WWE Universe by ruining something they love and personally hurting Taker himself.
While losing titles, getting put of out action, even getting killed all end up being meaningless to Undertaker and ultimately to the fans, losing the streak is the one thing that will truly do damage to the hearts of the WWE universe. And its the one thing that the Undertaker, for all his supernatural talents, can never get back.
Build that up with the guy mocking the streak via his own series of 19 straight "victories" (many of them just being cheap attacks on innocent people) as well as assaults on Taker himself, and all the audience will want to see this guy get his ass kicked come Mania.

I like to see Barrett myself. Mainly because Henry already face Taker. I really hate when they ingore there history. Much like they did was HHH. They completly forgot WM 17 the best WM overall in years never happened. How could they forget a match let then 10 years old with Henry?
I like the Foley as the old school Mankind idea as well. That would be cool.

I don't see Undertaker wrestling anyone other than a Veteran.
Thats what his recent history says. Any match could be his last, he's going to be in there with someone he can trust to get the job done.

I personally think that WM 29 will be in Dallas and Taker will retire in his hometown after facing Cena.
As for 28, it could be fun to put Taker into a Fatal Four Way and play up the fact that Taker doesn't have to be pinned to lose his streak. It creates all sorts of opportunities for drama and is a little easier on his body. Build 3 guys up as wanting to end the streak more than anything. It could be good.

As I've said before, Taker should sit out WM 28, because the show is already sold with Rock/Cena and it would open up a spot on the card for other deserving talent. He could return in early 2013 and attempt to go 20-0 against Cena in the main event of WM 29.

If they keep the Barret's barrage thing going they could have his streak culminate against Taker's mania streak.
I also wouldn't mind a Christian match just because. They do have a lot of history together (Ministry lackey vs Ministry leader, tag-team title history against each other).
Christian could just flip out after not receiving his "one more title match" (consistently loses #1 contender match-ups until the rumble, gets screwed at the Rumble and then screwed out of the chamber) the only thing he can do at this point to earn a title shot is to do what no one else could do and that is defeat Taker at mania. It would also stick it to everyone else who've stopped Christian run along the way (HHH, Mark Henry, Orton, Edge, Big Show).
It's sadly the only place I can think to put Christian on the mania card aside from some horrible multi-man tag match.
