Which matches have really amazed you? not just great MOTY style encounters but stuff that was either way better than you expected or the first time you saw someone who changed the way you thought about wrestling or the first time you saw a great match from a wrestler you previously thought was lousy in the ring.
Mine would be the Invasion RVD vs. Jeff Hardy match, first time I'd seen Van Dam and he instantly became one of my all time faves.
Benoit/Angles from Wrestlemania X7 that I thought would just be a filler match but ended up being a minor classic.
Bam Bam vs. Taz, I'd only seen Bam bam from his early wwf run and thought he was just a fat dude who could do a cartwheel his stuff against Taz showed what a great worker he was.
Also the Michinoku pro 10 man tag match at the Sumo Palace, which blew my mind and made me an instant fan of Dick Togo for being such a badass heel.

The first time I saw Carlito start busting out crazy lucha moves after years of being the blandest guy on the roster. Or the time I saw Chris Masters bust out a freaking half nelson suplex during his first run in WWE in a match with Carlito. I couldn't believe that these shitty wrestlers may actually be better than I originally thought.
As far as a match that just blew me away but I didn't expect much from...I'd go with Johnny Nitro vs. Shelton Benjamin vs. Carlito (he's popping up a lot here) from Vengeance 06. That was an amazing match with some really cool spots that we didn't usually see in WWE. Actually, the RVD vs. Edge match for the WWE title on that same PPV was way better than I expected as well.

The first match I ever saw....Foley/Taker HIAC.
Even seeing it now 13 years later....watching that fall of the top and through the top....I've seen it countless times....but damn. That's what got me interested.

This match was the first real taste I had with Japanese wrestling. It still is one of the best matches I have ever seen.

Recently, Nagata/Ishii from the Power Struggle show. It was randomly booked, and I wasn't really expecting much for it. It blew all expectations out of the water.

Another match that took my breath away was Steamboat/Rude ironman from Beach Blast 93. It was an epic battle that I couldn't look away from. The brash prima donna vs the heroic family man. It was so powerful. Their theme music, their entrances, and then the match. It had such a powerful feel to it.

I still find it amazing how hard Rude worked for a match when the type of character he had, drew so much heat, that he didn't have to.

Rob Van Dam vs Jeff Hardy at Invasion. It was the first time I had seen RVD in action and this match blew me away and made me an instant mark for RVD.

Edge vs Mick Foley at WM 22. I am not much of a hardcore guy, but those two had the perfect hardcore match in my mind. Every spot and weapon had meaning. Edge's look on his face at the end of the match was priceless.

The Colony and QuackSaw vs. FIST, Amasis, and Hallowicked from DGUSA's first PPV. This was the first CHIKARA match I'd ever seen, and it was so fun to watch I instantly became a fan.

Rey Mysterio Jr. vs. Psicosis, from Rey's Japanese debut, I think it was during the J Cup. I ordered a VHS(remember those) of Japanese matches from a tape trader and that match was randomly on the tape. I've been a Rey fan ever since.

Generation Next (Austin Aries/Roddy Strong) vs. Blood Generation at ROH's Better Than Our Best.
The entire match taught me how tag wrestling could be AWESOME again.
