Let's face it, I highly doubt the new series formula of "young female plus or minus young female's significant other" as the default companion is going to go away any time soon, but assuming we didn't have to worry about demographics, what would you want for a companion if you were allowed to step outside of the box?
I've got a few ideas of what would be fun (to me, at least)
- An American Civil War soldier; side doesn't matter, but he could be a reasonably ruggedly handsome sort of actor, get to do some of the more down and dirty fighting, and maybe have a rivalry with Jack if he ever comes back at all. I've been really wishing they would have some more historical companions, and if you didn't want to favor the US, he could be a British soldier from the same time period.
- A public domain character or author. Yes, I realize this risks making it a bit too League of Extraordinary Gentlemen, but I'd love to see a moody author like HP Lovecraft or Poe or really any troubled Victorian-age writer/poet along for the ride, though obviously using a preestablished character or real person does have a bit more extra complications.
- A properly alien companion. In a perfect world it'd be something done with an Andy Serkis suit; they tried it with Khamelion, but I want something with properly alien abilities, like a reptilian species that can regenerate limbs and thus damage sponge, or even a preexisting Doctor Who alien species. Heck, it might be gimmicky, but give me a "good" Dalek or Kaled in a non-typical travel suit. This would obviously have to be alongside a human companion, but I tend to like it better when there's at least two companions anyway.
I just wish they'd be a little more creative with companions, but we'll see.

The Idiot Lantern, a series 2 episode, had a older teen boy who was totally crushed and told what to do by family and his father.
I've always felt giving the Doctor a 'younger brother' character would ditch all the controversy and expectation surrounding a female companion, as well as being able to do a different take on how the Doctor can change and help people in their lives.
Plus, I like the idea of a character totally out of their depth with even the things we take for granted, let alone all the future tech stuff the Doctor has.

I always had an idea for a female Movellan companion. She'd have kinda a "Seven of Nine" personality with a very kickass/jump into action edge to it while at the same time being very interested in exploring the universe, humanity and finding a way to become something more then her programming as a war machine.

I'd love if they brought in another Jamie sort of character. A guy from times past used to traditional and outdated concepts trying to adjust into imposing new worlds.

They should do a few episode where it's nothing but trying out-out there companions. A young Chinese Boy from 4th century BC, a reformed Dalek, a Boston terrier, a pair of googly eyes glued to a pine cone, just as many weird things as they can.
Anything but a young British girl... or Catherine Tate.

Sounds like you'd like the audios, particularly on the author front, as the Eighth Doctor's most recent companion has been Mary Shelley. Her first adventure is 99p to download on Big Finish's site. They've also had an Egyptian Pharaoh-to-be who left before her reign, an Edwardian Adventuress saved from a crashed airship, a chameleon-esque alien from a parallel universe, and many, many more.
