What moment deemed unworthy of the finished product do you enjoy, perhaps as much as the film it was taken from?
For me...
Although, I do admit that it comes off more like a rejected Funny or Die sketch than something meant to be taken on face value in third film of an action/sci-fi series.
But it's so ridiculously awesome.

The extended restroom scene in Dumb and Dumber. Whereas every other scene in the extended version is unneeded, this was actually really funny, even though it was pretty disturbing...so I understand why they removed it...still, I wish they would put this one scene back in.

There are tons of deleted character building scenes from Attack of the Clones and Star Trek: Nemesis which would have significantly improved both movies.

I love Luke building his green lightsaber. The moment he lights it, it's almost like he's saying "Yeah, dad...darkside...sure...I'm gonna use this to shove the darkside up your ass!"
It's a useless scene, I know, and adds nothing to the movie, but Luke just looks badass with that black hood and cloak.

In the Simpsons episode that spoofed Fraiser, there's a deleted scene after the money falls off the cliff.
Great little bit with Hans Moleman.

This may be a little obscure, but there was a scene deleted from the 1986 film "Manhunter", the one with William Petersen ("CSI") as Will Graham, the guy who caught Dr. Lector, who wasn't played by Anthony Hopkins... it was remade in 2002 with Ed Norton and Hopkins...
Anyways, in the 'original' release, after Dolarhyde is stopped, the scene cuts from St. Louis to Graham's home on the beach in Florida, releasing the turtles.
There was a scene deleted from between these two, where Graham is standing outside somebodies house in the pouring rain. He goes in and talks briefly with the couple there... who were going to be Dolarhyde's next victims, and you just get the feeling that Graham himself doesn't quite know why he had to see her...
This goes back the idea that Lector told Graham earlier in the movie, that the reason Graham can catch these killers is because he thinks like them, and that he's one of them.
For me, it changed the feeling at the end of the movie. It went from a 'happy ending' where life returns to normal to an uneasy feeling of just how screwed up Graham might actually be, and how much help he's going to need to get back to normal.
(Haven't seen the redo, don't know if it's in that one.)
