I'd say beaver just for the lols.
Really think of all the crappy jokes sitcoms could come up with if people really started to eat beaver.

A lot of food problems would be solved if we ate insects instead of larger cows and other animals. They're nutritious and easy and cheap to keep, whilst livestock take up a lot of land, are expensive and can cause a lot of environmental damage.

People don't eat enough horse, I've always thought they'd taste delicious if I tried one. Matthew Broderick seems to enjoy it.

human... we should eat human. You know, this may sound horrible, but while I wouldn't actively hunt down people meat to eat but if someone offered me a bite of something and then told me it was human after I took a bite, I doubt it would really bug me.

We should eat more game meat in the U.S. Tends to be healthier and, imo, tastier than cows, chicken, and pigs. Fowl like quail, duck, and squab taste so much better than chicken. I know it's more expensive but even farm raised game birds are a superior product.
I don't know why we don't eat more lamb as well.

Rabbit, and it's damn good.
Raised them for years. I keep about 4 does and 2 bucks on hand most of the time. Never keep a buck more than a year, then I either swap with another local rabbit dude or I go to the country fair auction and buy a suitable breed for about 15-20$ tops. I try to maintain a mostly Checkered Giant bloodline because I'm impressed with the health, size and demeanor of the bunnies.
Only the bucks stay in a traditional hutch, the does and babies stay together in a large enclosre (about 15x40) with various things to play/chew/dig on. I get a lot of trimmings from a local Apple orchard. These tend to be the favorite "chew toy" for most of them. i normally get about a dozen bales of hay from some Amish (because they seem to be the only ones that make the smaller bales anymore).
With the 4 does and 2 breeding bucks, I'll end up with about 40 dressed rabbits (5-7lbs a pop) every year and that doesn't count the ones I give away as pets or for County Fair Projects.
I spend a total of about 200$ on food in an entire year.
Rabbits are also about the easiest animal I've ever found to butcher, but I'd imagine most people here don't want to hear about that so I'll move on from that topic.
If you ever want to try eating one, here is a simple recipe to make a no-frills way to find out how rabbit tastes:
Season a cup of flour with some salt and pepper. Stick the cut up rabbit in a bag/bowl/something you can seal Dump flour in with rabbit and toss. Heat a pan (medium)that can go from the stove to the oven with a little oil in it. Fry rabbit until brown on one side. Flip rabbit and stick the pan in the oven at 350F for about 30 minutes.
It will be tender and tasty. A little plain, but that recipe is not for making award winning meals, it's just a "starter". I like to add rosemary and garlic.

There's a breed of fish that shows up every few months on news reports, the one that's "invading American waters", the one that jumps out of the water and flies through the air whenever there's a disturbance. You know the one... someone got knocked out and drowned because they got his by one of these flying suckers while on a river...
Those. Kill and eat those suckers.

Carp are notoriously hard to make remotely edible.

Those snakehead (steelhead?) fish that are killing off local environments after some jackass flushed his pet.

To BHB, who suggested eating insects, I actually had a cricket or grasshopper taco once, and to this day it's the only meal I actually wish I could take back eating. I would literally rather drink vomit than eat an insect again.
They taste exactly like what they are, a crunchy and at the same time squishy little thing that breathes throughout its body the moist dank dirt it lives in. If you've ever smelled them at a tackle shop, they taste much much worse. If my only meat option was insects, I'd become a vegetarian.
I agree that rabbit should be more popular. It has a great flavor and for a long time (especially since it's indigenous) was eaten more than chicken in Europe.
Of course, for the rest of the world, I'd recommend more turkey and buffalo eating. I've eaten kangaroo once and really liked it. It's similar to beef but definitely worth a try.
To anyone who's thought about eating reptiles, they're actually milder than chicken and nothing to be afraid of. I actually would hesitate to eat them again since they're so bland.
To those of you bringing up domestic animals and humans: dog tastes like goat, cat like lamb, and humans taste like pork. Please note, I haven't eaten any of these animals, but have looked it up out of curiosity.
After eating a bunch of game meats, I actually grew bored of it since everything seemed to fall into beef like (elk, kangaroo, venison, ostrich, buffalo), pork like (wild boar), chicken like (frogs, alligator, turtle, pheasant, quail), and then I'd say rabbit, goat, and lamb as basic land animal flavor profiles.
In terms of seafood, cuttle fish and eel should be far more popular than they are. If you ever get the opportunity to try them, do it. They're delicious and the heartiest meals you can get out of the ocean.

Carp are notoriously hard to make remotely edible. Strangely enough, there was a report on the news today about the Asian Carp (the fish I was talking about) and how there's an 'underground market' for that fish. Apparently it's better tasting than the US common carp.
