Watching his Streak DVD on WrestleMania, he seems to be right around the same height as Jake Roberts who was 6'5 (according to Google) but years later, he seemed taller. Wassup wit dat?

Iv'e always thought the same thing...in his earlier days her seemed shorter and leaner and he seemed to gradually get taller and more muscular over time!

Muscular can be explained. Workouts change and considering the time he could have very well been on something (plus he bulked up a lot towards the end of the Ministry, dude got fat).
I know in recent years he has lost size, that picture of him with DX as an example.
Also, for most of his early streak he was at a size disadvantage. Giving up height to Gonzales (that was the point, I understand that), Sid, Kane and Diesel and weight to Bundy. Kind of odd that at his size they would always put him against people who dwarfed him in a way. I guess him being a babyface left them with few other options. I think Kama would have been a better WrestleMania XI opponent though.

Not a great shot but if you imagine Hogan upright, who was about 6'6 (kayfabe 6'8) Taker looks to be a couple of inches taller.

The guy who originally played Undertaker was smaller... You are thinking of the third Undertaker, the second one was bigger than the first. The third and fifth ones were both smaller. The 4th one was kinda strange with the blonde hair and facepaint.

Actually if you look back to a photoshoot he and Warrior did together for a house show tour in 1992, he's actually gained a lot of height since then
