Whether it be the subject or the sound of it, who are singers who don't stick to the same theme?
Brad Paisley tends to create a new sound for every album all while staying within the country genre.

Corey Taylor has considerable range. He can bark and snarl like a lot of his Slipknot work, rap a little (he's not great, but he's capable of it), he can straight-up sing over heavy rock tracks as Stone Sour proves, and I honestly think his voice is melodic enough to where he could do R&B if he wanted. Maybe it's just me, but some of his harmonizing on Dead Memories gave me Motown vibes.

The band Dreams Come True have done a song in pretty much every genre there is. When they reached their 20th anniversary as a band, I celebrated by listening to every album they'd released in that time, and the variety was such that I didn't get bored.
Oingo Boingo have quite a few different styles, too. From the very punk-ish, to their more new-wave sound, the slightly more electronic style they picked up later, and the darker, more orchestral sound of their last album.

Queensryche is a great example of constantly changing things up. Almost everyone of their albums sounds different from the others.

Beat me to it. Hm... Ah ha! Faith No More never made the same album twice. Every one of them sounds different and they use so many different styles. You could extend this to Mike Patton in general. EDIT: Beaten to that too. My work here is done.

Raul Malo (lead singer for The Mavericks) tends to do all kinds of stuff as well. He might take a traditional country song and do it in an different way.

If that's the case, then I would like to put AC/DC in that category as well. Yeah, so many different sounding songs from them.... Now that I've got that out of the way, with the exception of her first 2 albums, Kate Bush is someone who changes her sound with each album she puts out. In fact, I believe she has stated that she comes into making each album wanting to distinguish it from her previous albums. Whenever I hear a Kate Bush song, I can identify which album it came from within probably the first 30 seconds of it.
