Generally, you will be fine...especially in the given scenario.
The USDA website is loooooooaded with helpful hints, tips, and scenarios to help in just about any situation.
I work as a meat cutter (not a butcher) and youd be surprised at the questions folks come up with. As a matter of fact, allow me to give everyone some helpul words on two of the most common subjects I deal with daily:
2. Yes, by all means you can freeze chicken. Im actually kind of concerned that this is by far the most frequently asked question by folks of all genders/ages. I often wonder how many families out there settle down to 10lbs of chicken come meal time. Feel free to take out what you need and keep the rest in the freezer....if it isnt in the freezer, PUT IT THERE.
1. MEDIUM/NORMAL IS NOT A THICKNESS. One inch, a quarter of an inch, three inches, twelve feet, etc...those are all acceptable sizes...I have no idea what you consider "medium" or "normal" and I know damn well that your nonspecific ass will be the first to complain when what I cut is too small/large. Also, squishing your fingers together as close as they can get without touching and saying "an inch" sends mixed signals. Stop it.

I saw a meat cutter wanted sign at a local market. So I applied because I figured I know how to use a saw. They asked me what kind of schooling I have. I said "Grade 12 and a year of community college" They said "no, what schooling do you have to cut meat" I said "You have to go to school for that?" So now I have more appreciation from meat cutters.

Once you cook it though you can freeze it again though. I've had situations where I've had meat thaw and not be able to use it, so I cooked, froze it then used when I needed it later. Cold steak salads are one of my fave meals.
