Say I wanted a steak for supper. So I took it out and let it thaw. Then as I was about to cook it, I was invited out for dinner. Can I put the thawed steak back in the freezer? Or do I have to put it in the fridge and eat it at my next meal?

Not only does refreezing create ice crystals that damage the texture of the meat but bacteria that start multiplying as soon as the meat defrosts are not killed by freezing again.

As mentioned nothing, but bad can come of it.
However, if you unthaw and refreeze fish it is a whole new level of awful. With steak and pork you can almost get away with it. Yet, with fish it completely changes the flavor and texture of it and makes it taste like garbage.

Put it in the fridge. I don't exactly remember why but it's very unhealthy to re-freeze meat (or any food, for that matter).

Most of this worry comes from packaging tell you to not do this. It is not because of inherent dangers, but because companies did not want stores or customers destroying the quality of the food through ice crystals, then blaming Birdeye, etc, for it, as if it was their fault.
Just like the tag on your mattress, people could not resist coming up with horrifying repercussions that could follow if you didn't heed the warning.
That or if you re-freeze, another Mega Man game gets cancelled. Whichever, really.
