Clapton already did the solo on "While My Guitar Gently Weeps" on the White Album. A Perfect Circle did the best cover of Imagine yet to exist. Close enough to a Beatles cover.

Kenny Lattimore, my favorite R&B singer of the past forever, and a completely underrated singer, has done a couple of amazing Beatles covers. First, My Guitar Gently Weeps:

Ella Fitzgerald did some really great covers - Can't Buy Me Love, Got to Get You Into My Life, Hey Jude, Hard Day's Night, maybe a few others.
Michael Jackson's cover of Come Together is pretty great, as is Aerosmith's.

I know it's not his originally but I consider "With a Little Help from my friends" as a Joe Cocker song, as his version is so f***ing good and is IMO the definitive version.

Awesome hard rock cover of Eleanor Rigby from the 70s. They completely re-arranged it, it sounds like nothing like the original instrumentally and it rocks.
