We used to put mushrooms and bell peppers in them to fancy them up a bit.

Here's what I sometimes do:
Get broccoli slaw. Adds a healthy crunch that goes well with the softer noodles. Chop up some peppers - spice it up nice with habaneros or otherwise just use an array of non-spicy peppers. Get some smaller mushrooms to use whole or larger ones chopped up in slices. Add black pepper and some chives. Some people use a soft boiled egg, as well.
There you go!

What veggies and spices do you have for ingredients?

I'll second Hot Sauce and Meat. Before I used to get the "expensive" 80p Ramen, I used to like, douse it in various hot sauces. Sriracha in particular worked a treat!

My standby of several broke years is, exclusively, Rooster Sauce. Used it in some vegetable soup twice today. To top it off I suggest going to your bakery/market and picking up a small loaf of fresh Italian bread. Break it into small pieces, mix up the bowl, top it w/ Rooster, mix again, and you're set.

A couple of suggestions. Adding some raw onion or garlic on the boiling water is good; chewing them can be quite the kick. Instead of salt, I find that fish sauce is much better at giving the noodles flavor, and raw egg on the boiled water is also a nice extra.
You could go with making your own broth, if you're feeling ambitious.
Of course, instead of several instant noodles, you can try making some macaroni soup. Heat some garlic then onions. Usually some chicken is added at this point, but that's optional. Add water to the mix and boil; at this point, if you have broth cubes, use them. Salt, or fish sauce for flavor. Add the macaroni when water is boiling. Once macaroni is firm, you can add some evaporated milk.
It can last a whole day or two if you store it properly. To keep it from going bad, you can add the milk on your own bowl instead of the whole pot.

If you make it soupy, stir in a raw egg with it after you cook it. If you make it "dry" just add a yolk. It adds richness. The residual heat cooks the egg perfectly.
