It seems like very, very few of the actual, unquestionable final matches are really known or talked about. So what are some? The two that made me think of this thread were Kamala and Scott Hall. Given that one had both his legs amputated and the other just got a pacemaker I don't see at least Kamala ever wrestling again and probably not Scott either.
I know this thread is bound to be depressing, but it just interests me. Also, there are at least a few cases of a guy ending it on a relative high note like Edge beating ADR at Wrestlemania.

"Sick" Nick Mondo ended his wrestling career on a very high note when he went into Tournament of Death 2 knowing that would be the last time he'd ever wrestle. Because the harm he endured from the semi-finals prevented him from wrestling to his full capacity in the finals, he nonetheless won the tournament, and did so despite taking a horrific bump in the second round. Many people incorrectly blame that bump for inspiring Nick Mondo to retire from wrestling, but as he said in his autobiographical movie, he didn't want a long wrestling career and knew he wanted to retire after TOD2. He would have retired at the same time even if the big bump from the semi-finals had gone flawlessly.

Alison Danger ended on a high note with her final match a few weeks ago. Was able to go against her dream opponent (Hamada) and the champion (Melissa) while teaming up her friend/Protégé (Leva).

Mike Awesome beat Tanaka at ONS '05 and never wrestled again. He did then sadly take his own life but I'm pretty convinced he never needed to work again.
Mike is also the answer to a trivia question, which is I feel - who is the only wrestler to retire immediately after having his greatest ever match?

Didn't Mike Awesome go to TNA after the original ONS PPV since the WWF (foolishly) did not extend him a contract? If it's true that Awesome's match from ONS was indeed his final match, WHAT A WAY TO GO OUT! It's a real shame that Mike Awesome is dead, and that his death was so unnecessary.

I saw what was one of Kamala's last matches. It was an XOW show in town back in 2010. He looked pretty good. Got to talk to him for a few and he is a super nice guy.

Eddie Guerrero's last match against Mr. Kennedy is at least known for the fact that Eddie took a viscous chair shot afterwards.

I remember there were tons of rumors online that Mike would be offered a contract from WWE after that great ONS match, but it sadly never happened.

Benoits last match was pretty decent. Michaels had a decent retirement match but he may still come back. Decent is an understatement. Benoit's last match was good with some neat psychology. Michaels' last match was absolutely fantastic.

As I learned in Mike Mooneyham's article when Magnum TA was announced for Fanfest, his last match (the night he wrecked) was a win over Jimmy Garvin.

Yeah he's had five matches since WM, the most recent being on the 9/12/11 RAW teaming with John Cena against Alberto Del Rio and Ricardo Rodriguez.

His last match was a very sad match against Sting on Impact, IIRC. Steamboat faced Jericho at Backlash that year.

The Diving Headbutt into Burke's knees is an unfortunate spot though, considering how much of a role head injuries may have played in the end of his life.

Ric Flair had a few matches after that Lethal match, the last being on TV was with Sting fittingly. Batista had several matches after Mania 26 including 2 PPV main events with Cena, the last being an I Quit match at Over the Limit 2010 As it stands, Hulk Hogan's last (TV) match is with Sting. He did a couple of 6 man tags last year in the UK at house shows and was announced as a part of a match with Sting and Bully against the Aces and Eights but was never in the match. Taz's last match was the thing with Jerry Lawler at ONS '06, not counting that it was against the Goodfather. Mick Foley's is currently the 2012 Royal Rumble.
