By go, I mean at least be able to bust out a 3 star match if they were really pushed to it. Also, I'm not county retired guys.
So far all I can think of is...
Undertaker Sting Scott Steiner Marty Jannetty Shane Douglas
Even then I know Marty's foot is pretty screwed up and I don't think he fixed it yet. Also, Douglas is a HUGE maybe as I can't remember the last time he had a good match, but I think he has wrestled a few times in the last few years and MAYBE he could pull out a decent match if needed.

My last memory of Shane in the ring, he was very out of shape and throwing up. So, I'd put an asterisk next to Shane's name stating he can still go after a month or two of training to shed that layer of flab from being out of the business full time.

Steve Regal (debuted in 1983, but didn't come to the U.S. until 1992) has put on a few pounds, but I'm sure he could wrestle a decent match. Same with Finlay and Dave Taylor, if they're still kicking around.

Oddly enough I think you actually have more confidence in Shane than I do.

I would say Ric Flair but judging from some of the matches during his TNA run his days of good matches may be over.

Terry Funk & Jerry Lawler had a very good match back in 2011 so they're a maybe nowadays.
On the other side of the ocean the last I saw of him Genichiro Tenryu was still pulling out very fun matches.

I'm not really sure "can still go" really applies to some of these. Undertaker is for all intents and purposes retired. He does one match a year, sometimes two at most.
Tons of 80s guys are still making the rounds. Not sure "still go" really applies though. The Rock n Roll Express are still out there, or at least Morton is. Something tells me Bob Backlund could still do some fun matches. Sid still does stuff, mostly helping his kid, but he's nowhere near what he used to be. Abby and Mil still do their things on occasion, but it's not pretty.

I saw the Rock n Roll Express at an indy show not too long ago, and they can still go better than I expected them to.

What about Steve Blackman? He was in amazing shape last time he showed up on Raw, and didn't look like he had any ringrust at all. Or is he completely retired?

Dr Tom Prichard has done a pretty good job of staying in shape, and from the recent work of his that I've seen, I'd say he can still "Go."

I'm slightly tempted to include the Ultimate Warrior, but I'm not sure if he could ever really go without being carried. Plus, I don't think he's wrestled since that whole thing he had with Orlando Jordan some years back.

I'm inclined to say Undertaker counts. I Don't think it matters how frequently you wrestle as much as it matters that when you do it you do it well. Especially when those few times are as timeless as Undertaker's.
