How hard could it be to sink that thing? Just attached some dynamite to the side of it, and boom. No more cannibal rat invasion.

Tucking pants into socks won't do a damn bit of good, I own 5 non-cannibalistic rats and they're perfectly willing to charge across the room and run straight up your pants leg to sit on your shoulder in half a second.
If these things come to shore we're all dead or will have to bow to their whims. No getting around it.

So why can't they sink the damn thing? They've somehow lost the sonofabitch. I know the ocean is large, but the whole "ghost ship full of cannibal rats"...how'd they get on board, how'd the ship manage to shake its mooring and no one noticed it for long enough to lose it completely (not easy, it's a giant f***ing boat).

Plus, I imagine just sinking a boat could be a bit of a mess. You don't want to pollute the water so you need to be careful about how you do it.
I do wonder if Asylum is somewhere, cracking their whips until someone can churn out a few scripts based on this.

Odd thing about them. I've got friends with pet rats, and they're friggin' cute and actually friendly and easily trained. However, rats, wild rats or those trapped on ships, creep me the f*** out.

If the ship makes it to shore, we are looking at the zombie apocalypse. If we sink it far enough from shore, everything could go to plan and the disease will dwindle off. Or the ocean life could eat those rats and either make the disease more widespread and possibly delaying the apocalypse for future generations. I say nuke that ship!
