Sorry for the bump, but I had a question and thought one baked potato thread may be enough for FAN. Anyway, I haven't made a homemade baked potato with CHEESE in quite some time though I have made them without cheese. As mentioned earlier I really like the ones they have at Wendy's and the way the cheese melts. So I was wondering does anyone know what kind of cheese Wendy's uses to get that affect? Can it be done with just a microwave? Also, is there any cheese you can get the same affect with and dear I say make it taste even better than the Wendy's kind? I don't know what cheese Wendy's uses, but I recommend using a soft cheese like monterrey jack, mozzarella, or colby jack for best "melty" results. Sounds like a good idea. I think I mainly used to use shredded cheddar which comes out considerably different. I know Wendy's definitely doesn't use mozzarella (it's a way different color for exmple), but I'd like to try it out as I love mozzarella and I love baked potatoes. Man, I wish I had one right now!

I just pop a Kraft single in there right after I open it up and it's gooey as shit? Nah man, no thank you! I've always used shredded, but if I were to go to slices I wouldn't go for Kraft singles. Sure, they melt, but it's not what I'm looking for.

Butter (this is one of the things the omega-3 margarine crap actually subs ok for), a bit of sour cream, a bit of shredded cheese, and the outside that has some kosher salt is good enough for me.
Some chives can't hurt either.
As for the type of cheese, I cannot recommend the colby jack choice enough. The mexican blend they sell at the store is good too. However, for melty muenster cheese melts the best. But I've never seen it sold shredded...I think it's too soft to shred. Still you can rip a part of it and stick it in the potato when it's cooking and I'm guessing it will be a winner. Though in terms of taste on a potato I prefer the cheddar types of cheese. That being said most types of cheddar cheese shredded should melt just fine. Mozzarella is also a well known melter, though it's not my first (or 10th) choice on a potato.

If it's a really big potato, don't be afraid to give it 5-7 minutes in a microwave beforehand. Gives you nice, crispy skin and soft insides.

I love Baked Potatoes, you can get so much variety with them. My personal favourites are Chilli, Cottage Cheese, just melted butter or, when I'm feeling particularly "healthy", Tuna. It's one of those meals that I can eat and know that I'll be satisfied with it.

The thing with the cheddar is it melts jsut fine, but it doesn't swim (tough to explain without pics haha). I'm curious to try it with mozzarella though and now that you've seconded colby jack I might have to buy a bag of each and give that a try. You're right about the muenster though I've never seen it sold shredded.
