If Groot had to fight Poison Ivy, could he resist her mind control because he's an alien or would he succumb because he's a plant? Would some of her other tricks (poison, ect) work on him? Could Groot defeat her, or will Poison Ivy turn him on Batman?

I don't think her plant control works on sentient plants.
Though I'm not sure if they've ever had her fight another one before... other than her intro with the Floronic Man.
edit: though she did take over clay face with spores once so I'd imagine she could do the same to Groot.

How would she fight Swamp Thing? Well everything she can do Swamp Thing can do at a much much higher level, both are connected to the 'Green', it's just that Swamp Thing is on a god-level in comparison to Ivy. So in that fight the god of plant life would demolish the princess of plant life. -- Going back to Groot it probably depends on his Willpower. In a flat out physical fight Groot wins, but Ivy has control over plants so depends if Groot has resistance to that or not, same goes for any poison. Worst comes to the worst Groot has been shown to willingly sacrifice himself for the greater good, this will have two effects one he can ignite himself and take Ivy down with him she would die Groot would respawn again. Secondly if he harms himself Ivy will fell it and in turn suffer giving the edge to Groot. My money is on Groot if he has enough willpower to overcome Ivys plant/mind control.

He's not an Earth plant, she'd have no power over him at all. Completely different biology.
Hell, he's not even really a tree.

I wouldn't think so.
I just don't see an entirely different genetic/evolutionary structure bowing to her wishes. She's not even that powerful in general, much less with a creature that will be based in a completely different biology.

Groot has gone up against Thor and the Hulk so he got that in his corner. Poison Ivy being a “street level” villain normally would not go up against some thing alien like Groot. She has created “super plants” before but nothing amazing. I don’t recall her ever using her plant control on anything that has some kind of mind. But, I can see a scenario where she would use real plants against him and Groot refuses to harm the plant minions. So maybe ivy could pull off a tactical win. Maybe.

I wonder if Groot can make his tree wiener grow really huge like it was a branch.

As with everything Comics, it REALLY depends on the writer.
If they decide to use Ivy's usual power level, where she's abnormally resistant to, or outright immune to toxin and a brilliant biochemist/botanist I'd give the edge to Groot.
If they decide as with some writers to basically make Ivy the reincarnation of Demeter and make her, in essence, a literal personification of Nature and the like Ivy easily. She'd either be able to control him, or be able to control a parasitic vine or somesuch to either weaken, control, or subdue him.
Though, I would also argue that her ability to empathize/"understand" plants may actually keep them from fighting. Groot is not "Aggressive", he protective. He's also a Philosopher-Prince on his homeworld......With Ivy as a translator, he'd be a great Ambassador.
