So If and When this dream match happens at Wrestlemania like it should I've been thinking is the only way to properly end it is in a draw or no contest. Both Taker and Sting wrestle to their breaking point showing that there equally matched each busting out the trademarks at one point or another with lots of close calls ultimately to end in a no contest. With this you don't have Taker lose at Mania and Sting doesn't lose one of the few WWE Matches he will have. On top of all this I feel it helps keep the mystery still of the who would win Undertaker Vs Sting debate like one of those Comic Book Who would win debates.

One idea I've heard for this is courtesy of a friend of mine when we were drinking and watching old matches.
Undertaker and Sting throw everything they've got at each other. Tombstones, Scorpion Death Drops, basically they take each other to the limit like in the OP. They brawl up the ramp and fight on the Wrestlemania stage, Sting climbs up onto a piece of the stage and dives at the Undertaker causing both of them to break through the stage and fall into the darkness below. Bats fly out of the hole in the stage, the camera looks down and finds nobody there anymore.
Not saying they could pull it off but it seems interesting.

I'd say have Undertaker win. I like Sting, but technically, when it comes to the "dark" gimmicks, Undertaker was the original, even though Sting has more experience. I'd say have both guys down, but Sting gets up before 'Taker. He nods at 'Taker, then leaves then arena, as he takes a bow, then the entire roster lines up the ramp applauding until the lights turn blue. Thunder hits, and Undertaker sits up. The crowd cheers as he takes it in, then he walks up the ramp one last time, and when he gets to the stage, he turns to look back like always, the gong hits, and Undertaker is gone in smoke to close the show.

They should do that "guy beats the other guy up in the corner for too long" DQ and try to set some kind of booing record.

Let's be honest it's only ending one way.

While I was reading this, I seriously thought you were suggesting ending it like the classic Human Torch match Sting had in WCW. Needless to say, I was kind of disappointed once I got to the end.

If Sting only has ONE WWE match in him, he should win it. No matter who his opponent.
If Sting can go for a couple of matches, then the victory in a (hopefully) possible Taker vs. Sting match is up for grabs.

Bray Wyatt interferes, Sting and Taker beat him up for spoiling their match, then they celebrate together.
