I am debating getting the WWE Network, but my only real concern is do they only show the PPVs live or can you watch them on demand, or do they have later replays? I have to work Sunday nights and I usually get off around 10, so if they only show live ppvs it would be pointless for me to subscribe.

yes. I get off work at midnight, so I watch the ppvs at like 1:00 when I get home or 8:00 the next day.

Typically they replay on the live stream at the top of the hour following the PPV (say it ends at 9:45, then the replay is at 10) but they might run a post game show which delays that slightly. In any case, they go on demand as the show ends so you can pick it up in that section as well.
I'll warn you, if you have a mobile device with the WWE App installed, turn off all notifications as they will give results as the show goes on. Sadly you might get one as the thumbnail for Mania but cannot avoid that.

If you get back home whilst Wrestlemania is still happening, there is an option which allows you to watch from the beginning of the show.
Just click onto 'On now' and it gives you the option to either watch now and join the show live, or you can choose to watch it from the beginning.

I got it and the first I noticed was the "on now" option to start from the beginning. I got it for Wrestlemania, but I have a bad feeling I will be watching more Prime Time Wrestling than I should.

Just click onto 'On now' and it gives you the option to either watch now and join the show live, or you can choose to watch it from the beginning. God this thread reminded me of the hell that was Sky Box Office.
Not being able to record the live show meant having to try and catch a replay from the start, which I never did. It would take about a week for me to manage to watch the whole PPV and never in the right order.
