Streets of Rage 2 is awesome, my favorite Genesis brawler. Sonic Blast Man 2 for the SNES is an underrated gem.
Capcom's beat em up track record is amazing.

I'm aware of those and they're good for what they are, just I think some side scrolling beat 'em ups would have been great, given Leos and Death Army units would both be good fodder.

Capcom's arcade brawler line up from 89-97 was and still is the gold standard for the beat em up genre. Streets of Rage 2 was the best on the home consoles with Final Fight 2 and 3 close behind. Speaking of the home consoles I had great fun with two Power Ranger games on the SNES and the SNES version of Ninja Warriors. And lastly I can't forget about Konami's contributions with their TMNT games (Consoles and Arcade), The Simpsons, Vendetta and Metamorphic Force.

WWF Betrayal lol Nah just kidding, even tho I'd say it's ok still and not horrible for being a gbc beat em up. My favorite is easily streets of rage 2, I've always wanted streets of rage 3 but never splurged what people usually want on ebay, well a month ago I saw it at the flea market near me and got it for only 5 bucks. If you have a ps3 there is a collection that has it on there plus one and two. I love the whole streets of rage series Well as I said, I got sor3 now, there's something about playing it on the Sega genesis that I love, especially with the genesis controller (6 button one)

Knights of the Round by Capcom is by far the most underrated title in this genre, with a unique scoring system that rewards you for not taking hits and getting extra points by hitting items found in containers for higher totals. The more points you get, the more levels you gain, and the more levels you gain, the fancier/more effective your weapons and armor becomes, to the point they eventually look like completely different characters compared to how they started out. It had a decent port to the SNES also. It's an acquired taste but emphasizes strategy and mastering the block technique rather than just mashing away. Also has some beautiful graphics, a fitting score, and immersive atmosphere. It also has the token out of place Samurai/Ninja/Japanese martial artist as a stage boss, following the tradition of the Simpsons and King of Dragons, among others.
My favorite overall is Knights of the Round and both Tower of Doom and Shadow Over Mystara, although the latter's a bit too long for a beat em up. Golden Axe: Death Adder's Revenge is also a great title, if unbalanced and also too long.
Konami made great titles in general back then, but their beat em ups just never felt as refined as Capcom's or even Sega's.

Final Fight - I have beaten this game more times than I can remember, also love how a lot of the characters would later make it into the Street Fighter series.
Streets Of Rage 2 - just a flat out awesome game, and a kick arse soundtrack, I have it on my I Pod and have it playing in me car sometimes.

This is my all-time favorite genre. I love all the ones mentioned already, but a good lesser known one that my friends and I spent hours upon hours on back in the day was Guardian Heroes. (Sega Saturn, baby!) As far as arcade brawlers go, Capcom and Konami had so many outstanding titles - Captain Commando, Alien vs. Predator, Violent Storm...I could go on and on.

To piggy back on a comment, Capcoms beat em ups was just a great way to see how you perfect a formula.
Battle Circuit was a culmination of their work, starting from Final Fight.
