For example, the place I work right now, the week starts on Friday. Being as the rest of my life's week starts on Monday, can be pretty confusing at times, especially since we make our own work schedule weekly.
Is there a reason employers do this? Seems so arbitrary.

I work at a supermarket, our week starts on a Sunday because our sales start on Sunday and they end on Saturday

My work place my pay day happens on a Tuesday and my weekends happen in the weekday. Just the whole payday on Tuesday is random. Like I'm used to every second Friday or once on mid month or end of the month.

I've never encountered a weird work week, but I did work for a company that measured time in "quads". There were four weeks to a quad and thirteen quads in a year (with one extra day in the last quad). In some ways it was a really good system but sometimes it could be very annoying.

I work at a supermarket, our week starts on a Sunday because our sales start on Sunday and they end on Saturday That makes sense. Try working at a place where the week starts on Wednesday and ends on Tuesday. Yet, our pay cycle is always every other Friday.

I work four days on, four days off.
Makes paychecks wildly inconsistent. It sucks sometimes.

My workplace starts their week on Wednesday's, the reason being that we're busiest on Mondays, Wednesday's, and Fridays and nearly all of our staff tends to come in on Wednesdays (we all work 4 10's). So we have our staff meeting and paydays on Wednesday's, which is when we start the week.

When I worked at the movie theater, weeks would always start on Friday as that is when most new movies come out (baring the occasional Wednesday or holiday release).

My current work week starts on Friday, ends on Thursday.
My last job had a Thursday-Wednesday pattern.
