Pretty much every movie Marvel has made, even if it wasn't a part of a connected universe the way the MCU is now, Stan Lee has had a funny cameo. My favourite one is from Winter Soldier where he's working security at the Captain America exhibit, and sees that Cap's suit from the first movie is gone and says "I am so fired".
Close second for me was in Avengers: Age of Ultron at the party where he was dragged away after drinking some of Thor's aged liquor and drunkenly saying "Excelsior".

Mallrats or Fantastic Four 2005. His part in Fantastic Four is endeared to me because he's actually playing one of the characters he made. There's just something special to that for me.

Mallrats wasn't really a cameo. He was included in the intro.
Anyway, my favorite was Thor and Hulk. The deleted Avengers theme would've been great, but the one used was a good callback to the old Marvel cartoons

Stan and Lou Ferrigno as security guards in Ang Lee's Hulk.
