That one where Bobby gets a gig working concessions at a NASCAR race.
Also the one where he trains to become the sports mascot for his school. The scene where Hank lowers the garage as he stumbles upon watching him dancing around is a prime example of the series' subtle sense of humor.

My two favorites are the one where Hank becomes a pimp and the one where Peggy buys a PhD online.
That said, Hank's stiffness and naivete are perhaps my 2 favorite character traits ever on TV.

The volunteer firefighter episode always makes me laugh I loved Boomhauer telling his version of events. Him sounding normal while the others talk like him was great.

The volunteer firefighter episode always makes me laugh If push comes to shove, I'd probably have to say this is my favorite as well. It's a great bit of slapstick humor and each story retelling of how the firehouse burned down gets funnier with each character. I'd also like to throw out "Mutual of Omabwah" because my favorite episodes are the ones in which every main character has something happening. Whether it's Hank and Bobby panicking about their lack of insurance, Peggy and LuAnne trying to forage for food at the truck stop, Dale and Joseph testing out bee venom, or Boomhauer and Bill frying everything they can get their hands on, each has something to do, each is funny in their own way, and it all ties together without being clunky. If there are two episodes being mentioned that I may disagree with, it's "Ms. Wakefield" and "Bobby Goes Nuts". With "Ms. Wakefield", I don't like how the neighborhood turns on Hank for reacting perfectly reasonably to a completely unreasonable request. It's actually one of my least favorite episodes for that reason. With most "King of the Hill" episodes, people betray or turn on one another, but usually it's done for stupid or vain reasons. In this, Hank is being completely logical in not wanting this random stranger to die in his house, yet people behave like he's throwing a homeless person out onto the streets. As for "Bobby Goes Nuts", I get why it's the signature episode of "King of the Hill", because it has a memorable catchphrase, but outside of that it's a fairly hollow episode. It's got some funny lines ("I'll tell you what I can't do: sleep on my stomach! But I can sure as heck punish you!") but some of my least favorite episodes are ones in which good characters lord some modicum of power over good characters for no reason other than to get away with it. Bobby Hill isn't an inherently bad child but he behaves like a petulant jerk in this episode for absolutely no reason.

Another good one was the episode where Peggy takes the class to Mexico on a field trip and accidentally brings back a Mexican child back to Arlen. One of the highlights was the field trip itself where they go to a Carnicero, a butcher, that Peggy thinks in a carnival. The butcher starts butchering chickens and Peggy tries to cover it up as a magic trick. And of course Peggy's testimony in Spanish at the end.

the volunteer firefighter episode. I always get a kick out of how in Bill's fantasy he's even fatter and balder than he actually is, and in Boomhauer's version it's everyone else who talks incomprehensibly fast.
the one where Bill, Dale and Boomhauer all end up in the loony bin is another personal favorite.

So many good ones to choose from, so I'll go with a couple that haven't been mentioned.
Keeping up With Our Joneses: The one where Bobby, Hank and Peggy get addicting to smoking ("I like stories, I like stories about pinatas.") and Plastic White Female: the first season finale where Bobby uses Luanne's beauty school training head for make out practice. ( Peggy Hill: I know it is not my fault. If anything, this is your fault. You made him go to that camp with no toilet doors. Hank Hill: Don't point your finger at me, woman. You're the one who parks him in front of the TV and makes him watch all them Muppets. They got frogs kissing pigs, what the hell did they think was going to happen? )

My top three are: -Hank accidentally becomes a pimp (Bill chasing after Hank's car and yelling "bring me back a redhead!" puts me in tears) -The one mentioned above where Peggy accidentally brings a Mexican girl back from Mexico -The one where they get stranded in Mexico and have to sneak back into the US. The first time I saw the scene where they go through the border and Dale tells everyone to stay calm, only to panic and run off at the first question asked made me laugh harder than anything else on the show.

I'll go with one that hasn't been mentioned and say the one where they rent a backhoe to dig Dale's new septic tank. Always enjoyed Dale laughing at Drew Carey's character for thinking a metal detector would work to find the pipes, but it would constantly being going off from all the alien minerals in the soil and sending signals back to their home planet.
The episode where Dale gets into basket weaving was pretty good too, though I haven't seen it so often.
