Did they ever give any explanation as to why a guy with a real job (garbage man, plumber, hockey player, Race Car driver, etc.) was also wrestling?
I guess the wrestling baseball player was there because of the MLB strike, but I can't think of any others off the top of my head.

They should have done other career choices, too. It would have been interesting to see a grocery store cashier gimmick

Usually they would have vignettes where they'd talk about how proud they were of being some blue collar guy and their humble roots and how they were bringing their skills to the WWF to take on the top Superstars of the day...you know like Hakushi

I guess the wrestling baseball player was there because of the MLB strike, but I can't think of any others off the top of my head. Actually, MVP (yes that was his original name) was there for a very brief time in September 1993. Don't recall the reason for the character - I'd have guessed it was the off-season, playing it off as a MLBer who wanted something to do when not playing ball, but then it was September when the season was not quite done yet - but they didn't utilize the character much at all. The IC title battle royal on Raw was the only match I remember him being in. But then a year later, during the strike they brought him (Steve Lombardi/Brooklyn Brawler, FYI) in direct reaction to the MLB strike, with the name change to Abe "Knuckleball" Schwartz. Lasted from August to November, with pre-debut vignettes starting in June. I think that time they tried to pass him off as a major leaguer who either wanted something to do during the strike, or was a dirty player who got kicked out for being too rough.

At the risk of reading too much into this, would you count Goldust as someone with another career i.e. an actor?
I might be wrong, but didn't the vignettes have him saying he wanted to bring the Hollywood spotlight onto the WWF?

I dont think Goldust was ever portrayed as an actor...more like a big eccentric movie buff who fondled men.

When I think 'world class athlete', the first thing that comes to my mind is 'moonlighting plumber'.
TL Hopper was the least-threatening-looking 'gimmick' wrestler I can think of.

Wasn't it mentioned on commentary and in vignettes that Jeff Jarrett was only wrestling in the WWF in order to raise his music profile?

Of all the stupid gimmicks in the WWF over the years, this one always made me shake my head. Tony Anthony wasn't going to be main-eventing in the big leagues like he did in the indies, but he had too much potential as a credible mid-card brawler and, as a heel, a completely hateable a-hole.

I think they just had regular jobs and that wrestling was them pursuing a passion. So basically, they were saying wrestling didn't pay enough

It's what I like to call the "Hillbilly Jim Effect." Guy is a [insert occupation or stereotype here] and he's pretty good at what he does (but not one of the elites in that field.) He also has a passion for wrestling, which [in kayfabe] he's pretty good at too. Now watch as he takes elements from his first "job" and applies that to his now unique wrestling style. I use Jim as the prototype because it's the first one I ever saw and they used up a lot of time showing off his training and showing exactly what a hillbilly should be. But you can only do that so much so you have to let the audience fill in the blanks themselves.
