I think I have to amend my vote to poached. A good Eggs Benedict is one of the best brunches ever. That, and to be honest with you guys and gals, I can't cook a sunny side up egg to save my life. I have tried the cover method, the spoon the fat over the white method, but everytime I try to move the egg, the yolk breaks. I can poach an egg with ease though.

small well seasoned cast iron pan set on medium low (about a 2 out of 10 if I have time, sometimes I do 3 or 4 if I am short on time) melt a tablespoon of butter in the center crack an egg into the melted butter and let it slowly cook. It will nearly poach itself in the butter little salt and pepper when the white is cooked but the top of the yolk is still bright I'll scoop it out and eat it with soft toast
