The first house show I went to, the announcer said Austin wouldn't be there, and some guy walked out after that You could say that guy took his ball and went home Austin wasn't even on the match listing!! Lol, I remember people around him yelling that he wasted his money then

In 2003, I went to a house show that was supposed to be main evented by Triple H and Ric Flair vs Kevin Nash and RVD (yes I paid money to see this - like 10th row too). Triple H tore his groin earlier that week (the injury that necessitated the shorts look), and so he was replaced by Kane. Kane had just unmasked on Raw the week prior, so we got to see him without his mask before he debuted that look on TV

The other was a WCW house show. The advertised match was a 6 man tag putting the Freebirds(Hayes, Gordy, and Garvin)vs Sting, and the Steiner Brothers. Being the Freebird mark that I was, I was disappointed to learn the Birds weren't going to be there. Man, that sounds like it would be a hell of a 6 man tag.

I went to a house show in 2015 just a few days after Cena broke his nose on RAW. He had been advertised, so of course it was announced Cena wouldn't be there and refunds were offered. Honestly, it was a pretty boring card and ended with Jericho/Owens in a cage match.
EDIT: Guess this isn't quite what OP asked for, since the injury was legit.

Although it was wonderful a year later when Daniel Bryan showed up even though he'd been announced for the other leg of the tour. They ended up giving the poor fans of the other leg Big Show vs Randy Orton as their main event. I remember that well. We ended up booing both Big Show and Orton out of the building in the same way that the Royal Rumble match was booed out the building the following year. The problem was that WWE had no idea of how popular Daniel Bryan was and hadn't told anybody in advance that he wasn't going to be there. So you can imagine how everyone felt when the Big Show came out instead! To make matters worse, we had the whole lame distraction finish that they used in the subsequent PPV so we didn't even get a proper end to the match. A massive disappointment for the entire crowd. Looking back, I can at least say that I saw the start of the Daniel Bryan fan backlash but at the time I felt majorly ripped off.

John Cena's Marine duties/stabby-stab angle saw him replaced with Rob Van Dam at a Belfast house show in 2004. Also, a ton of people perplexed that Carlito had the US title, since Cena'd literally just won it from Booker T and Smackdown hadn't aired over this side yet.

In 1986, I attended a WWF House Show in Wheeling, West Virginia. Junkyard Dog was scheduled to face Nikoli Volkoff, and evidently missed his flight or something. They substituted SD Jones in the match and he WENT OVER Volkoff.
More than half the crowd didn't even realize the change, but I did as a 10-year old JYD mark.

I think all of them do. The one I went to took place around the brand split so they pulled all the Smackdown wrestlers (namely Styles and Del Rio) and also Finn got injured drastically changing the card.

In late January 1991, I was at a house show at Maple Leaf Gardens when Yokozuna subbed in for Bam Bam Bigelow (reason for his absence was never given).
He ended up working a title match with Bret Hart and nine-year-old me was freaking out because I was convinced Bret was going to lose his title before WrestleMania.
Bret won by countout, but Yoko kicked his ass after the match.
This was the match they ran prior to the intermission because the main event for that swing of house shows was Mr. Perfect vs. Ric Flair in a loser-leaves-town match.

The last time I know of WWE coming up here was when WWECW was around. They were advertising Kurt Angle. I wanted to go, but as they didn't advertise well enough in advance, I couldn't put in for the day off at work, so I didn't get to go.
Between me hearing about the show and it actually happening, Angle left.

Not a big change, but I remember a house show where Chris Masters came out in regular clothes and complained the airlines lost his luggage. some fan yelled "f*** DELTA!"

At a house show I attended in 1993, WWE canceled an advertised match between Sherri and Luna Vachon. I think Luna was out with an injury around this time. WWE advertised The Ultimate Warrior for a show in my town in 1996. Unfortunately this was right around the time that he and the company had another one of their little spats and he didn't show up. We got an announcement that Warrior wouldn't be there, and WWE even offered refunds. Must be around August 1996. Same thing happened when I attended my first WWF house show that year. Warrior was supposed to wrestle Goldust on that card but quit before that and he was replaced by Yokozuna, who won in about a minute. Which lead to the most hilarious hissy fit by Goldust I've ever seen.

I believe it was Dec 1994, shortly after Diesel beat Backlund for the title. I'm assuming it was due to poor ticket sales, but the entire house show was canceled. The reason we were given was Backlund having a sore back. Let me get this straight....The actual reason that they gave people for cancelling the ENTIRE card was because Bob Backlund had a sore back?

I went to a Nitro and they kept hyping Hollywood Hogan to come out and he never did. I was f***ing pissed, they kept showing videos of Hogan back stage during commercial breaks and the show ended without him making an appearance. Not even a dark match
