Evidently he eats a very meat and vegetable heavy diet and avoids carbs. Why do I think that if I tried that I still would not develok his kind of abs?

You also need to work the muscles bro.
I've been working out for close to a year and my abs still aren't showing despite the rest of my body developing well.
It's not incredibly complicated to have abs, but it takes a lot of determination diet wise to achieve. That's why so few people have them if they aren't just super skinny..

He needs to bulk up a bit. Otherwise going against the big boys on a semi nightly basis is going to take years off his career.

Genes also play a fairly big role in how much someone can pull off a look like that. Like, not to undersell Balor's dedication to it because that shit is still hard to maintain, but there a lot of people could spend years doing all the right things and still never manage to develop that look. They would get in shape, they would even look cut, but not to the same degree. Balor's got the genetics to be able to do it and he's spent years devoted to maintaining that look.

I've been working out hard three days a week for about 3 years now, with less carbs and healthier nutrition. Not even near Balor's look, would need to slim down like 15/20 pds extra to have some kind of visible sixpack

Abs are 70% genetics, 29% in the kitchen, and 1% working out. Some people don't have the genetics or muscle placements to have highly visible abs. Like look at Kofi Kingston with his chest placement and square abs and yet he's one of the leanest and athletic guys on the roster. But working out and heavy lifting gives you abs. Braun Strowman can compete with Finn Balor in core calisthenics movements because you incredibly strong core muscles to lift heavy but he has to put on more mass so he can't have the highly visible abs look.

I vaguely remember thinking his training regime was crazy when I watched a BBC documentary on him. Can't remember the details though.

A friend of mine is on a crazy no carb diet and has lost a scary amount of weight. He eats a lot of fat and no carbs, so I don't really see how it's healthy. He drinks water, diet sodas, or half and half. Yes, half and half. It's apparently working but it sounds disgusting and unhealthy.

He drinks water, diet sodas, or half and half. Yes, half and half. It's apparently working but it sounds disgusting and unhealthy. Sounds like a Keto diet, whole idea is to starve your body of carbs/glycogen so that you go into Ketosis, a state where you burn fat for energy. Much like any nutrition plan, without doctor guidance many people take it to extreme and mess their systems up. It can certainly lean in the "really crazy" camp when you miss the forest for the trees, but your friend amped it to 11 by drinking half-and-half straight (most of us sane Keto dieters just use full cream in our coffee). The diet sodas aren't likely helping either, but I digress... Balor has done the normal dedicated method of eating clean and working out like crazy. The more you put into that, the better the results. Who are we to judge their habits when the results speak for themselves I say?

We going to find out that he is Gluten Free too? I would think that going carb-free (or as carb-free as he states he is) would logically mean a very low gluten intake. That said, he's not totally carb-free - he has been known to go for the odd bowl of porridge in the morning and, if he's got a weakness for Jaffa Cakes, a bite of Timmy's isn't going to kill him. His exercise regimen will make up for it. Seriously, though, I hope he's not _too_ strict about it all that he's got no life outside it. That would suck.
