I just beat Breath of the Wild recently, and I've been doing a lot of thinking about Zelda as a franchise, so figured it'd be fun to talk a few Zelda-related topics.
Quick thing on this: different Zelda games often go for different narratives or gameplay styles, where a different form of Ganon might be better than others given the specific circumstances. I'm just making this more of a general question, sort of "if you could just have one..."
So, which version of your ultimate antagonist do you prefer? Ocarina, Wind Waker, and Twilight Princess gave us the story of Link combatting the Gerudo King Ganondorf across multiple timelines. Ganondorf Dragmire is a crafty, scheming, yet terrifyingly powerful warlock with human features but otherworldly power. He often plays the chessmaster role, moving heroes and villains alike into positions that best aid his own goals, usually without their knowledge or consent. He is usually depicted as the bearer of the Triforce of Power, has the ability to change into the demon form of Mandrag Ganon, and has also been known to wield a stupid-powerful sword. This allows you to have a recognizably human figure as your chief antagonist.
Ganon, the pig man, was featured in earlier games like Zelda I, Adventures of Link, and Link to the Past (plus a cameo in the Oracle games). Thought to come from a third timeline in the Zelda franchise (this whole timeline craziness is a bit overrated, if you ask me) where he has lost his human form, having been granted the power to conquer the world thanks to his evil wish upon the Triforce. We don't hear him speak much, and seems to be more of a hovering, omnipresent threat over Hyrule, brooding to take over more of the world than he already has. He also showed up on the cartoon series and squealed a lot. Once more, there's a face to the villain, albeit one that's far less human this time.
Breath of the Wild gave us Calamity Ganon, a form which seems to be more "it" than "he". Thousands of years have led to Ganon becoming more of a force of hatred and corruption than anything else, seemingly still capable of planning great harm, yet taking a form that's hard to even comprehend. This is more of an Eldritch Abomination than anything else, a force of nature, an intangible foe that one may not put much of a face to, but takes on terror on another level.
