I know this gets made fun of (and I'm guilty too) and people see it as him patting himself on the back, but is it really that hard to believe? Watch any "behind the scenes" doc with wrestlers, music stars, whatever and you usually will see at least one weepy fan. I can especially believe it in Brets time when wrestlers seemed more larger than life.

I have no trouble believing it happened at some point, especially given the emotional nature of people backstage after big matches.
Its more the number and frequency that Bret himself says it happened that eventually led to the story reaching memetic status.
That on top of stuff like 4/10, and people walking up to about saying he had the best match just lent themselves to becoming running jokes.

Due to the camaraderie backstage and wrestlers respecting good workers, I can imagine the locker room being an emotional place at times. However, because Bret mentioned it several times in the book, it makes it harder to believe - although that's not to say that it didn't happen.

Yeah, judging by Bret's book, the cashier at McDonald's looks at him with tears in her eyes, telling him he placed the greatest order she has ever seen.
I love Bret, and his book is amazing, but he really seems to feel the need to make sure that everyone knows that everyone thinks he's great.

Bret is legitimately one of the greatest of all time but he's probably also one of the biggest marks for himself of all time. When people riff on him for stuff like that it's usually pretty loving.

I'm sure it probably happened once; it's just that his book was SO self-aggrandizing at points (though still a great read) it got funny and became a fun meme.
