I have a tendency to like stacked cards better because I feel they can really make a show bigger than a one match card.

I'd watch WrestleMania 17 over WrestleMania 27 any day of the f***ing week, even with the latter having the better Triple H / Taker match.

For a PPV or a PPV level show I expect a stacked card.
But LU has spoiled me on 1 match episodes which they have pulled off flawlessly ...Breaker Of Bones , both All Night Long matches and every Aztec Warfare.

Depends on what I paid to see the show.
10 to 15 bucks I am happy with one really good match. Any thing higher than 15 bucks and I want a stacked card.

I guess it depends. Sometimes a card can be TOO stacked, if that makes any sense. Like some of these recent Wrestlemanias have you feeling overwhelmed by the halfway point because there's just so much stuff that we're supposed to care about. If everything is supposed to he important, some good stuff that would've been memorable on it's own gets lost in the shuffle.
I prefer more of the Wrestlemania model of old (like Wrestlemania 19 and older): 4-6 really important matches with entertaining filler to bridge the gaps.
A one match show can be ok if the one match is one you REALLY want to see. The early Attitude had many of these. There is a palpable sense of anticipation in the air as the crowd waits through some pretty bad stuff waiting for Austin's match to start. Not as good as a balanced show, but not without any redeeming qualities.

Dory Funk Sr and Mike Dibiase apparently did one match shows against each other, but I think it was just so they could keep the gate and not have to pay anyone.

It really depends on what I'm viewing...
If I'm watching television, I'm okay with a one match card. That's the point of putting on episodic television. Especially if the show is only an hour long (though if we're entering three hours I might need one more Marquee match).
PPV should be seen as big events to justify the price tag. The card needs to be fairly stacked to for me to get my money's worth. That being said, not every match has to attempt a five star classic. I need a filler match or two to keep me from burning out.

Really depends on what the overall goal of the show is, I suppose. A card that's meant to serve as a big ending for a series of feuds, and has marquee name value like Wrestlemania or Wrestle Kingdom or ROH's Final Battle should probably be stacked. Other times, I'm happy to see character interactions and a bit of filler (as long as it isn't completely pointless) in the service of letting other things build up, and letting the main event really be the exclamation point on the night.
