I mean, it made more sense when Sherri was singing it, but why would Shawn want the girls to 'eat their heart out' or 'hands off the merchandise'?

Hands off the merchandise works because he's cocky enough to be suggesting women simply couldn't help themselves around him. He's not suggesting he doesn't fool around with them at all, but that he has his pick of them.
