Go nuts.
Some of mine:
GODZILLA: KING OF THE BOXED SETS - This would be a huge set. - Every Godzilla film ever, including the American attempts and those Netflix things - Not only would it include the original Japanese versions and the authorized English versions, but it would also include the AIP releases, with their own dialogue tracks - Both cartoon series, the Hanna-Barara effort as well as the spin-off from the '98 film. - All 256 3-minute episodes of Godzilla Island, the Japan tv series utilizing Bandai toys as the characters - Godzilla Vs. Wolfman - the "lost" film made in the early 80s as a fan film by former Godzilla crew members - All episodes of Zone Fighter that feature Godzilla, Ghidorah or Gigan - Commercials, as many as they can locate. Trailers, Dr. Pepper, Shogun Warriors, Barkley, Snickers, whatever. - Documentaries including a general history of Godzilla and the kaiju genre, an in-depth look at Godzilla in comics, Godzilla in video games, a retrospective on the various suits and the suit actors, another focusing on all of the various unmade G-projects from over the years, etc.
SPECTREMAN - All 63 episodes of this show, in the original Japanese version and the dubbed syndicated version that I grew up watching. Include the pilot too. It doesn't need much else.
THE SONS OF HERCULES - In the 1960s, Embassy pictures bought the rights to 13 Italian peplum (sword & sandal) films, re-dubbed them to give them connections to Hercules (who was popular at the time thanks to the series that started with Steve Reeves) and released them to television under the TSOH series title. This set would include both versions of all 13.
THE RUSS MEYER COLLECTION - At least the 14 his estate owns. The early films or the studio films are optional.

Wrestlers in movies collection. If it's a film that even has the tiniest cameo, it's in. If there was a scene cut, it's put back in.

The complete and I mean COMPLETE MST3K collection. With all movies included in non-MST3K and MST3K form, the KTMA run, specials, bloopers, etc. Of course it will never happen because of rights issues and would take a million discs, but I can dream

I know that specific wrestling feuds/storylines hardly ever get their own comprehensive home video releases, but I kinda want WWE to do a Broken Matt Hardy collection when/if/when they buy TNA.

Star Wars: The Orginal Theatrical Trilogy on Blu-Ray. My pick as well. It has to happen one day. There’s just too much money waiting to be made there.

Complete collections of actors/actresses. For example, for Tom Hanks, have every film he's ever appeared in, from He Knows You're Alone to The Circle, or for Jim Carrey, everything from Rubberneck to Dark Crimes.

A proper Raccoons complete series set (with the cold opens, with unobstructed end credits, includes the specials)
The Happy Days Universe (Happy Days, Laverne and Shirley, etc.) with proper music in place as well as appropriate closing logos, no edits for referencing lyrics in the dialogue...
Can name several game show titles...even sizable best of's would do.
Due to size, rights issues, etc, won't happen, but...series sets of Mister Rogers (MRN of course, but what the heck, let's have Children's Corner/Misterogers chapters too) and Sesame Street...at least '69-the end of the '80s. Other PBS shows too like Electric Company and Square Damn One Television.
Ultimate Ready Steady Go! Name any other musical show of the 60s and up here, really.
A REAL Complete Beavis and Butt-head collection. No creator's choice crap. Every episode, pre-fire incident eps. totally intact, all music videos intact, TV appearances, the music video(s) to promote The B&B Experience album, that Celebrity Deathmatch episode, the movie!
Classic (i.e. pre-90s) New York City local television...station IDs, continuity, movie or other local show openings, sign-on and sign-off sequences, promos for reruns and movies, as well as first run shows...laugh if you must but I'd watch the hell out of it.
WPIX Yule Log Ultimate Edition. Again you'll laugh at me, but bear with me here, as there's a lot you can include for such a simple concept. The presentation as we know it now (5 hours with the 1970 California log), a 1966 Gracie Mansion version sampler, the Log's Life WPIX special, commercials for the presentation, the different versions of the announcement before the Log begins (complete with the different slides WPIX used over the decades). Interviews with Chip Arcuri. Oh, and a soundtrack CD set.
A Christmas Story Ultimate Edition. Now I am pulling erased (so we think) materials from thin air. The movie with the lost scenes restored (particularly the Flash Gordon sequence). I also want a collection of Jean Shepherd WOR broadcasts like the one or two every DVD of ACS since the mid 2000s has included. There's an Amazon documentary about people looking for ACS memoribilia and info to include as well. TV spots, trailer, heck, maybe a Messy Marvin Hershey's commercial or so. Maybe vintage ads for the toys and products seen in the movie. And yes, a soundtrack AND score CD set.
Pulling what I believe is lost/erased material again...but I'd love to see a Sally Starr set with her work as a kids' host in PA. I read about her, saw some clips and interviews online and she's so likable and I would've liked to see more.
Ultimate Popeye set. Warner Bros. ended just getting a little into the Famous Studios era with its "official" sets. Let's have the Fleischers, the Famous Studios, KFS, even the various Hanna-Barbera series on SatAM. Popeye and the Man Who Hated Laughter from the Saturday Superstar Movie. Popeye and the Quest for Pappy. Robin Williams movie. Even premiere the Sony movie we were supposed to get there. Commercials for Popeye items, items Popeye was the mascot for, so forth and so on.
The MTM Enterprises Universe. Starts with all of The Mary Tyler Moore Show, naturally. Except Fox/Shout!/etc. puts effort into the extras beyond the second season. Corrects the few episodes that had music rights edits. Include the MTM skit from mid-'80s SNL with Ed Asner, and other spoofs and homage moments. Rhoda, all network cuts this time. Carlton Your Doorman animated pilot. Phyllis. Lou Grant. Talk show appearances. Award show appearances. And a montage of EVERY variant of the MTM logo.
Now, I guess since there were St. Elsewhere episodes that made reference to TMTMS, we can include its entirety? Have a feature on the Tommy Westphall Universe. And for "The Last One," the ability to toggle between the generic syndication credits and...you know what.
Unrelated, but all the Charlie Brown specials and the Charlie Brown and Snoopy Show. They started this with the 60s and 70s specials and they did release all of CB&SS, but the 80s and beyond need sets. And anniversary and tribute shows. The movies too.

I'd like the Godzilla set, and I would pay top dollar for a complete Russ Meyer set, even with his early nudie flicks. The original theatrical Star Wars movies would be great as well.
I can't really think of anything better... how about a complete WKRP with the original broadcast music?
Or maybe 'season' sets of the original Doctor Who, instead of the story collections they seem to do?
Has there been a complete Lucio Fulci set?
