BBQ chicken thighs with baked potatoes.
-Get about two packages of bone-in chicken thighs. Pat em dry and season them with whatever you want. I used adobo seasoning (From Goya), chili powder, garlic powder and paprika. Bake in the oven at about 450 degrees until it’s cooked, slather in bbq sauce. I prefer Stubbs, best sauce on the market. Cook and let them get sticky.
-Baked potatoes you can do the day before or even before you make them. I prefer Yukon gold potatoes.

I love a good frozen pizza (try Screamin' Sicilian) but I really had homemade meals in mind.

Some of that absurdly processed jarred cheese mixed with ground beef. As easy as it gets, but makes for a pretty tasty dip.

I love throwing together buffalo chicken wraps when I have the sauce. I use the spicy garlic sauce from Buffalo Wild Wings. It's a very tasty, thick sauce that packs some heat but not too much to overpower everything. A lot of delis carry buffalo chicken now, but the quality varies. GFS had my preferred one when I made these regularly. Stores sell wraps specifically for this sort of thing, so get some of those, slather on some sauce, add the chicken, and then I typically would add lettuce and a few slices of tomato, and finally a mild cheese to it like mozzarella or provolone. Put one last line of sauce on top, wrap it up, and enjoy.

Can’t go wrong with meatball subs either, especially if you want to be lazy. Get some frozen meatballs, throw some sauce in and let it cook.

Tortilla Pizza.
get a tortilla, cover it with tomate sauce,cheese of your choice ,topping of your choice and 10 minutes in the oven.
Also Corn Cob cradled with Bacon and covered in butter.
or Rice fried in bacon fat and caramelized onions.

Spaghetti with meat sauce. While the noodles are boiling in a pot, brown some ground beef in a saucepan, and then add a jar of sauce. Drain the noodles, and voila!
Either that or stir fry beef. While the rice is boiling in the pot, fry some beef strips, mushrooms, bamboo shoots, minced garlic, and onion slices in a wok. Add your choice of sauce and there you go.

This for me. Although, 9 times out of 10, I use the cheapo grated parm cheese. So much better if you can get the pecorino romano though, imo.

Deer / Antelope / Elk Steak. Dredge in Bread Crumbs. Fry, pour can of cream of mushroom soup over it. Veggie and Potato.

Italian sloppy joes. Brown hamburger, pour in a jar of spaghetti sauce and heat up, then put it on buns. You can sprinkle cheese on it too if you want.

Laziest but favorite simple meal I've done was rice, and crushed butchiron. Chicharon made from a chicken's... craw, some sort of digestive part they have where they store food. It's got a good amount of crunchiness, salt and spice that works well as a rice topping.
For less odd food, nothing wrong with simple fried chicken and rice. Either marinated in fish sauce, or heated up first with a sprinkling of salt before being fried.
Also, it takes a bit more work that it can't be called simple, but chicken adobo is great. Chicken stewed in garlic, soy sauce and vinegar.
