How does the whole "Shao Kahn conquering the realms" thing work? When he conquers it, does he get every single planet and star and whatever in said realm? And then what? Do the planets get transported into Outworld's realm like as adjoining planets?
And if so, how do they get from place to place besides portals? Do they have some magic spaceship?

Oddly enough, this is one of those things that 'make you think'. OK, supernatural villain from a fictional media, you now 'rule the world'... now what are you gonna do with it? What was M Bison going to do after victory. Or after Brain The Mouse succeeded in taking over the world... then what would he do every night? This question has been answered for SOME video game villains at least, like in Chrono Trigger and Final Fantasy 3/6j. Lavos from Chrono Trigger basically wanted/needed the Earth to sap all it's resources for it's own survival. Kefka from Final Fantasy literally only wanted chaos and destruction. He was successful in his own mind in ruling the world as long as it was all in ruin. What was M Bison going to do? Take ever country that he now ruled and open Thailand-themed import stores in all of them? ('Thailand' because he was "from" that country in the original SF2 series.)

He does run the underworld I think. I think both realms have access to different hereafters and just pull someone back to life when convenient for the next tournament due to some popular demand.

Going by the intro of the first New Super Mario Bros. game, his mushroom size is his normal one, and the smaller size is a result of some sort of attack or spell by Bowser's forces. Super Mushrooms then would be a curse nullifier, but only until hurt again. I'm guessing Peach uses what magic she has (established in the first Super Mario Bros.'s manual) to remove the curse once she's rescued. As for the original post, I figure Earth is a focal point planet, making it a good base of operations. After all, we never hear of aliens in Mortal Kombat save for the guest characters, and that's the place where the Elder Gods watch. He takes Earth, then anything else he'll deal with as it comes his way.

I've always wondered how a basic human with maybe 20 years of physical training under their belt (usually less) could ever hope to win a fight against people who have been fighting and growing stronger for thousands of years.
But then again, I tend to ask myself that question about quite a few video games, movies and animes that I've seen.

Makes me really want to see a show or game or whatever where The Chosen One, wielding the Legendary Weapon, invokes The Power of Friendship and The Hero's Determination while facing down the villain, then gets his shit stomped in because the villain has decades more skill and experience than he does. I'd find that really cathartic.

He makes the realms fuse and they become one (it's a big part of MK lore that part of Outworld used to be a different realm called Edenia, which is where Sindel, Kitana, Jade, Rain and some others originate from). I seem to recall reading somewhere that Shao Kahn's goal is actually to fuse all realms, which would somehow allow him to become an Elder God, which in turn would put the Elder gods at risk of being fused back into The One Being, and the Mortal Kombat tournament was created as a way to stop or at least slow down his takeover of Earthrealm, as part the deal is that he is only allowed to get to Earthrealm and invade it if Outworld wins 10 tournaments in a row (which they then retconned to merely forbidding him from fusing Earthrealm with outworld, so he was still allowed to invade it and apparently just never thought of that, and the Elder Gods allowed it because they're jerks). The thing I never got is that if they are fighting to the death, then how do they show up in the next game? Simple: those aren't fights to the deaths. Finishing them is allowed, if not encouraged, but it's not mandatory. I've always wondered how a basic human with maybe 20 years of physical training under their belt (usually less) could ever hope to win a fight against people who have been fighting and growing stronger for thousands of years. But then again, I tend to ask myself that question about quite a few video games, movies and animes that I've seen. Bodies do have a limit. You can only grow so strong. At some point you're just maintaining a level and not getting any stronger (and if you can, it surely involves acquiring a macguffin). Plus, it's highly likely that, due to the separation of realms, Earthrealmers used techniques most if not all Outworld warriors would have never faced before.
