I read an article recently on Kotaku about how playing Bloodborne "ruined" other games for the author, where they kept thinking about Bloodborne while playing other games and going back to Bloodborne instead of continuing other stuff. I've never been able go get very far into Souls games but it got me thinking about my games I can go to pretty much nonstop, and the ones I think about playing when playing other stuff.
For me right now, the two main ones I could play pretty endlessly are:
Persona 5: Probably my favorite game, like Persona mushed together with Sly Cooper + stylish everything? I can just zone out and relax while playing it. I'm on my third playthrough now and I'm still not tired of it. It's a super long game but I kind of love how much game is crammed into it. If it comes to Switch as rumored that thing is going everywhere with me.
Splatoon 2: It's my go to online game, I got the pink/green joycon bundle and it being downloaded makes it really easy to jump into whenever (as long as I mash through the long intro).
So what about y'alls?

Overwatch is still my go-to for online play. All the heroes make it easy to keep it fresh for me and I usually just shoot the shit with friends on it.

Mass Effect 2. There's so many variables of how you can play and interact with the NPCs.

God knows how many hours of my life I've sunken into a handful of Mario games (including both platformers and RPGs, though that's largely SMRPG and the first two Paper games), Zelda games, the N64 / PS1 to Gamecube-era Harvest Moon games, and wrestling games.

Tetris in most of its incarnations.
Right now Tetris 99 is my go to pick up and play game as most sessions have me feeling like 2011 Christian always looking for one...last...match.

Spelunky is close to perfect. Took hundreds of attempts to beat everything. Then Daily challenges after that. It's never quite the same twice so that keeps it interesting. Like the article writer I often get the annoying thought I could have been playing Spelunky instead of putting up with bits I don't like in other games.
Tetris. Currently obsessed with Tetris effect.
Mario in general, Smb3 in particular.

Games that I've put countless hours into (and by countless, I mean literal thousands of hours): - Super Mario World - Super Mario Brothers 3 - Legend of Zelda: A Link to the Past (thank you Randomizer!) - Tetris (specifically Tetris DS, but any iteration will do) - Marvel: Avengers Alliance (RIP )

Pro Evo 2011 - Still the best footie game ever made.
GTA V - I just happily ride my motorbike, collect my business earnings and bang Ursula every few days.
Red Dead Redemption - Now exclusively play as a trader, killing animals and selling their pelts, and occassionally murdering a lawman who strays too close to my ranch.
Skyrim and Oblivion - I'm obsessed with building up my coin hoardes and skill levels to ludicrous heights.
Minecraft - I'm building my own country. It will eventually include a space station and undersea base. I should be finished sometime around the year 2078.

Super Mario Bros 1, 2, 3, and Super Mario World. They're just fun and engaging and challenging in all the right ways.

Mike Tyson's Punchout!! Invariably, that is my video game answer. Can you beat Mike Tyson? I have. One of my proudest gaming moments was an August night in 2012 beating him. First time I got the decision. Second time the TKO.

At this point I think as long as they keep releasing Final Fantasy X for whatever Playstation has, i'm going to keep buying it and getting frustrated when I have to do Tidus chocobo race
