So recently I've been looking up information on a lot of exotic fruits that I'd like to try. One of them I saw that I decided to order online was the sprouted coconut. For those that don't know, when a coconut falls off a palm tree and embeds itself into the ground, it will grow a second husk around itself and sprout a small palm stalk. Meanwhile, inside the coconut itself, the small seed will start absorbing the coconut water and some of the coconut meat and turn into this crispy, foamy, oily ball that's edible.
So I opened my first one up today. It was tasty. Needed a little sugar. I passed pieces around the office, let people taste it. It was a fun treat. But I'm not really feeling continuing to eat this things whole, as is. The problem is I still have three more of them and I'm looking for something to do with them. Does anybody have any recipes or recommendations for them? Maybe a way to preserve them long-term?
