I mean those matches or one off feuds where the challenger didn’t move too high up the card afterwards or got a permanent main event spot, but the match and/or segments entertained you anyway.
I’ll mention the Styles/Joe program (mostly for “Oh Weeeenndy”), the Cena/R-Truth feud where Truth essentially lost his mind, all the matches Cesaro and Cena had, the Spirit Squad overselling for DX, and Rock’s Hurricane moments.

At the time, Jeff Hardy and The Undertaker. Jeff wouldn't get the main event push till years later. And it gave us arguably one of Jeff's best promos ever with "I'M STILL STANDING".

Wrong company, but I really like the Sting vs Lord Steven Regal mini feud in WCW the month the Outsiders showed up.

Sadly it never really wound up amounting to anything but the Cody and Goldust / Authority feud was a lot of fun.

Carlito vs Sandman was a bright spot in a dark time.

I don't know about elevation because both guys were already at the top at one point but Sheamus vs Big Show's random matches were really good and they have amazing and surprising chemistry together

Stevie Night Heat. Stevie got all this airtime and lost nearly every match.
I do realize that this only happened because he bothered and the higher ups weren't paying attention.

Not sure if this is what is meant, but I enjoyed the mini feud of WWE Chanpion CM Punk and Mark Henry that was concurrent to Punk’s actual title feud with Chris Jericho so much more than the Jericho feud.
And I’ll say it:
Henry’s matches were better.

Pretty much any Stevie, Al Snow, or Raven angles around this time are my favorite examples of what I think the OP is going for

The Tyson Kidd/Yoshi Tatsu feud in the not watched at all NXT over an action figure or the Derrick Bateman/Johnny Curtis feud over Maxine and Dirty Johnny shenanigans. Really a lot of just absurd stuff in NXT that worked.

Or the Christian/Randy Orton matches, despite Christian eventually losing the feud. Or pre-Painmaker Jericho’s work with 2012 Punk as champ and Cena, despite Jericho coming up short against them.

Wrong company, but I really like the Sting vs Lord Steven Regal mini feud in WCW the month the Outsiders showed up. Alot of WCW's Midcard feuds were alot of fun: Vader/Cactus, Cactus/Nasty Boys, The battles over the World TV Championship, Dean vs. Rey, Dean vs. Eddie, Jericho vs. Dean.

Almost every feud that didn't revolve around Christian's title reigns on WWECW's latter years...
