Seconding Saberspark as well.
Also, Sarah Z has some smart and funny videos, like her discussion on the Lorax's Once-ler fandom and the "Other Girl" trope.
I watch a ton of CGP Grey as well. Would easily recommend "Rules For Rulers", "Secret City of London" and "Vegas Isn't Vegas".
And I've been getting into Writing With Jenna Moreci, which can be a good confidence booster if you're a creative type.

SGB - Fun Let's Play Channel with Somecallmejohnny with his brother and friend
Comics Explained - Really good comic channel. Breaks everything down and even when he's done with an arc he will upload the whole thing in a compilation which will end up 4/5 hours like when he did Geoff John Green Lantern run which is 9 hours
Gamers Little Playground - Has the game "movies" in cutscene form and good way to kill time or see how games play out you are on the fence on

UrinatingTree. He's ripped on the Sharks 3 times now, but I'm not offended because every bit of it is absolutely true. I'm actually wanting him to do a video making fun of the Oakland A's next. Only thing is, I wish he'd do more NBA videos. He'll rip on teams that struggle in the modern days, but I want him to do some Legacy of Failure videos chronicling the worst teams' entire histories like he's done for the other sports.

If we are just counting original content (and there's loads of channels I watch for old school commercials, shows, wrestling, closing logos), I'd have to say...
GAME SHOW GUMBO (not just because it's Sigmafan's channel ;-))
Red Letter Media
Cinema Snob
Phelous
Cinemassacre
The Daily Woo
Matt McMuscles
Wrestling With Wregret
Nostalgia Critic (yessssss...but I still watch if it's about something I'm interested in...)
Oddity Archive
Vee Infuso (though again depends on the topic)
Saberspark
Hitler Rants Parodies (yes, sucker for Downfall memes still...)
Funny or Die (mainly for what you'd think)
Jaboody Dubs

I subscribe to a lot, but have a few that I watch religiously...
UpUpDownDown is probably my favorite channel. It has given me so many laughs and has made me see some wrestlers in a different light that made me like them better. Just about every video is fun, with some being absolutely awesome.
I was a bit late to the Funhaus channel (found it last year), but I really enjoy it. Some of their content isn't as strong with them working from home, but it's usually more fun than not.
Retro Replay hasn't been the same since Troy Baker left, but I loved watching Troy and Nolan play through games - especially when they were playing through the Uncharteds and The Last of Us. While Nolan has been doing a great job with his son and guests, I do miss Troy a lot. I definitely watch it a bit less now, but maybe I just have to get used to it...
I go to TheRadBrad for walkthroughs. If I'm on the fence about a game, I'll watch a few minutes of his videos and then decide whether it's for me or not. What I like to do is watch what he did at certain points in games after I beat those sections to see who had the better strategy. I'll do the same with ZackScottGames sometimes, but not as much.
BeingTheElite is great and I love it, but since they only release a video a week (understandably), it's not at the tippy top of my list.
Those are pretty much the main ones. I do enjoy The Major Wrestling Figure and Chris Jericho channels, as well.

most of what I watched have been mentioned... I will second Pitch Meeting. OutsideXbox/OutsideXtra do great gaming content, well worth checking out. Past the list videos, things like Show Of The Week/Weekend really spotlight the crew's personalities. Their 'Oxventure' D&D campaign is also utterly brilliant. Kyle Kallgren's "Brows Held High" was one of the best video essay type shows in the Channel Awesome days, and he's only got better with time, doing less of the recap format and more in depth studied of everything from bisexual lighting to Weimar cinema. . Outside Xbox randomly came up in my list of suggestions and I do watch them a bit... they're pretty good from what I have seen Kyle is someone I keep meaning to watch again I really did like his Brows held High stuff back when he was on CA... but never sought him out afterwards.

There's a few I dip in and out of but Techmoan has become one of my absolute favourites. Be warned though, it may get you interested in things that you didn't know you found interesting before.

Kyle's newer content is better than anything he did at Channel Awesome. He's moved away from mocking euroschlock movies in favor of genuine critique and discussion of how movies are made, kinda like what Lindsay Ellis is doing but with more obscure subject matter.

She was one of the contestants on Holiday Baking Championship on the Food Network. Got eliminated before the finals, but her personality is very memorable.

SummoningSalt's recaps of the history of video game speedruns are really fascinating and also just relaxing to watch, the passion he has for it shines through and I end up wanting to replay the games even though I'd never be able to come close to the skills shown off. The Choco Mountain video is one of my favorite short documentaries. His weekly recaps were hit or miss last year but the Days of our Steelers saga is still one of the funniest content runs ever. It was even better in real-time since that season started out with such high hopes.
