I put this here because most of the best ones are very old matches rather than current. Can be moved to current if the mods desire.
1. Undertaker Vs HBK 2. Undertaker Vs Mankind 3. Undertaker Vs Brock 1 4. Undertaker Vs Triple H 5. Triple H Vs Batista
Honourable mentions-
Triple H Vs Cactus Undertaker Vs Brock 2 Armageddon 2000 6 man

1. HBK vs Taker, Badd Blood 1997. The first one is still the GOAT to me. Enough said.
2. Brock vs Taker, No Mercy 2002. Such a bloody brutal match. I love how they barely used weapons, and there was no leaving the cage. They used the cage more as a weapon and just had a killer match. Plus Heyman constantly screaming on the outside is hilarious and brings some levity.
3. Taker vs Mankind, KotR 1998. The only reason this doesn't rank higher, is because I'm conflicted about the long term effects of this match on the business and on Mick Foley. Plus I feel like the match should have ended sooner. Both for the sake of the story of the match plus for Foley's health. The thumbtacks were overkill imo. Still, seeing those death-defying falls still gives me a crazy feeling in the pit of my stomach like no other match.
4. 6-man Hell in a Cell, Armageddon 2000. This match is just so fun, and has some of my favorite wrestlers of all time. Plus, they did the fall off the cell a little safer. I love Vince losing his mind trying to take the cell down, and Steve Austin whacking Triple H with the camera. And Kurt Angle winning is such an unexpected underdog win.
5. DX vs The McMahon's and Big Show, Unforgiven 2006. Maybe a strange choice. I haven't seen it in many years(lost Disc 3 of the Hell in a Cell set) but I remember finding it super fun when I did watch it. It's such a strange but great mix of violence and comedy. Literally the only thing I didn't like about it, is they introduced the way oversized Cell that they haven't gotten rid of since then.
Honorable mentions: Batista vs Triple H at Vengeance 2005
Cactus Jack vs Triple H at No Way Out 2000
Chris Jericho vs Triple H at Judgment Day 2002(I was close to putting this one in my top five.)
Steve Austin and Undertaker vs Kane and Mankind at Raw 1998. More of an angle than an actual match, but it's still a fun and chaotic Raw moment that never gets talked about.

The Armageddon six man feels like something that would never happen. Six top guys (well five and rikishi) in a violent and dangerous match all at once? It feels like a video game where you and all your mates pick the craziest stipulation and all the too wrestlers but one picks a random guy like rikishi

HIAC 1 and Uso’s/New Day are great. Most everything after Foley is a miss for me though. A major spectacle of course, but after that then everyone just sits around waiting for the big cell bump. Totally unnecessary gimmick to be used regularly IMO.

I feel like everyone has already covered my favs, but I have to add Edge and Taker. By the time this Cell match happened, the gimmick had been kind of played out, but they took the PG limitations and went all out in their feud ender.
I also think this was the last time a feud actually built up to a Cell match instead of just having it because it's that time of year again.
Also Brock/Taker 2 ruled. Should have happened at Mania. Taker's last good match.

1. Over the Edge - this is one of the only ones that's a good wrestling match inside the Cell. 2. Brock/Taker 1 - an absolute bloodbath that culminates with Brock throwing Taker onto his shoulders like he weighs less than a baby 3. Brock/Taker 2 - shouldn't have happened. Both guys were older. I hated them wasting both Brock and Taker's limited appearances on each other. I assumed they'd not be allowed to bleed, which made it feel pointless even when I'm largely against blading nowadays. But it's actually a modern-day minor masterpiece for both men, not as good as the other one, but a personal favourite. 4. Foley/Triple H - a much more controlled version of the '98 KOTR, the latter of which I now find unwatchable. Almost all the same bumps but way less scary. One of the peaks of babyface Foley. 5. New Day/Usos - an astonishing match simpy because of how violent it was without any blood. Such a painful match to watch, a marathon of violence.
Honourable mention: Jeff Hardy vs. Orton because I didn't care about the match or the feud, was sick of Jeff and barely cared about Randy, and it stole the show.

Also yeah I think we both hated taker coming back to feud with Brock in 2015 but then we got sold on it after the raw brawl and then the summer slam and HIAC matches turned out to be actually awesome haha. Loved that feud. Takers last good match btw

A few other points, I feel like a bloodthirsty sicko but I can't get into the tamer matches where they just hit each other on the back with kendo sticks and that's it. Not asking for big bumps off the top or chair shots to the head, but.. it really helps to see some blood.

You're already in the cell and have more room to hide certain effects from the live audience, so take advantage of that.
